Fed & Fit’s Loaded Cauliflower Mac & Cheese

Fed & Fit's Loaded Cauliflower Mac & Cheese | Plaid and PaleoGuys! I am so excited to be sharing a recipe from Cassy of Fed & Fit’s new cookbook with the same name: Fed & Fit! I’ve been following along with Cassy’s blog since I first went Paleo. Her step-by-step instructions helped me when I was new to paleo and really new to cooking in general! I had the pleasure of getting to know Cassy more when we took the same blogger course last year. Her drive to educate people about eating clean and transform their lives is amazing! She has a super positive attitude and bubbly personality that is contagious!

Cassy’s cookbook, Fed & Fit, is filled with more than 175 paleo recipes! 175!! That is a ton of recipes. Some of my favorites include this Loaded Cauliflower Mac & Cheese, BBQ Cobb Chicken Salad, Chile Relleno Enchilada Casserole and Tandoori Chicken Nuggets. On top of all the amazing Paleo recipes, Cassy included special workouts created by Juli Bauer of PaleOMG. Fed & Fit is what the title say. Fed & Fit’s Loaded Cauliflower Mac & Cheese

Ingredients

  • 1/2 lb bacon, thinly sliced crosswise
  • 2 heads cauliflower
  • 1/2 cup full-fat coconut milk
  • 1/2 cup nutritional yeast
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground black pepper (omit for AIP)
  • 1 tsp finely chopped fresh chives, for garnish

Directions

  1. In a wide soup pot or heavy-bottomed saucepan, cook the bacon oner medium-high heat until crispy. Using a slotted spoon, scoot the bacon in a bowl. Drain off most the the fat remaining in the pan, but don’t wipe the pan down.
  2. While the bacon is cooking, cut the cauliflower florets away from the steams. (You should have 6 cups of florets.)
  3. Bring about 4 inches of water to a boil in a large pot. Place the cauliflower in a colander or steamer basket that sits above the water and steam for 10 to 15 minutes, until the cauliflower gives easily when poked with a fork.
  4. Transfer the steamed cauliflower to at the pot you used to cook the bacon. Add the remaining ingredients, except the chives, and stir to combines. Cook over medium heat for about 5 minutes, then remove from heat. Stir in half of the bacon and transfer to a serving dish.
  5. Garnish with the remaining half of the bacon and the chives. Serve warm.
