Loaded Mashed Purple Sweet Potatoes

Loaded Mashed Purple Sweet Potatoes | Plaid and Paleo
Thanksgiving is only a couple short weeks away! This year I want to mix up the standard Thanksgiving sides. I was stoked when I came across these little purple potatoes at my local grocery store. I did a little research and from what I’ve found purple potatoes stem from the sweet potato family. Does anyone know if this is correct?! Either way these little purple potatoes are delicious and a fun spin on the classic potato. I have loaded them up with classic baked potato toppings for a flavorful side dish. Sprinkled with bacon and filled with caramelized onions, these loaded mashed purple sweet potatoes are sure to be a hit! For more Thanksgiving inspiration check out more recipes here! 

Update: Purple sweet potatoes are definitely paleo approved! The variety is technically called Okinawan. You can read more about them here. To me they taste more like a regular potato than the traditional orange sweet potato. If you aren’t a fan of the orange, give purple sweet potatoes a try!

Loaded Mashed Purple Sweet Potatoes

Ingredients

  • 2 lbs purple sweet potatoes, peeled and cut into chunks
  • 2 onions
  • 1 + 1/2 tsp salt
  • 6 pieces applewood thick-cut bacon
  • 1 can full-fat coconut milk

Directions

  1. Bring large pot of water to a boil.
  2. Add in one teaspoon salt and potatoes.
  3. Cook until potatoes are easily pierced with a fork.
  4. While the potatoes are cooking, start prepping the onions.
  5. Cut onion in half from stem to end. Cut off ends and peel.
  6. Place cut side down. Cut at an angle, stem to end, to create even half-moon pieces.
  7. Separate onion pieces.
  8. In a large flat-bottom skillet over medium heat, cook bacon until crispy.
  9. Remove bacon and toss in the onions.
  10. Stir to evenly coat with bacon grease. Season with 1/2 teaspoon salt.
  11. Cook on medium to medium-low for 30-45 minutes, stirring occasionally.
  12. After potatoes are cooked (they will be easily pierced with a fork) drain and return to pot.
  13. Pour in the coconut milk. Use an immersion blender to mix until smooth.
  14. Fold in the onions and top with crumbled bacon.
