I forgot about my love of flat iron steak until I found this steak on sale at the grocery store! I used to get the flat iron steak from TGIF’s way back in the day. This creamy salsa verde sauce is bomb! It is great on any steak, but flat iron is an amazing inexpensive cut that is also tender and delicious! I made this Flat Iron Steak with Creamy Salsa Verde just in time for Labor Day. Summer holidays are my favorite because they all revolve around being outside, hanging out with friends, drinking and eating lots and lots of delicious food! I will be spending my Labor Day doing all of those things plus grilling up this Flat Iron Steak with Creamy Salsa Verde!
I spent this last weekend in Iowa for a wedding. This is my second wedding of the summer with 2 left in 2016! It was so nice to escape the Arizona heat and be surrounded by so much green, along with miles and miles of corn fields. I love Arizona but it is very brown! From the brown dirt to the brown mountains and the brown dust storms, brown is the color of Arizona. I “survived” my second haboob yesterday. A giant cloud of dust engulfed the blue sky in a matter of minutes, and my favorite view of Mummy Mountain disappeared from the landscape. The sun was completely blotted out from the sky. Coming from the tornado alley, I am no stranger to severe weather but dust storms are a new one for me. I am crossing my fingers we have seen the last of these storms for the year though. I just want to enjoy sunny Arizona as it is finally starting to cool off after a summer of 110+ degree weather. Anyways, I can’t wait to fire up the grill with this Flat Iron Steak with Creamy Salsa Verde and enjoy a Labor Day pool day!
Ingredients
- 1/2 lb tomatillos, husks removed and quartered
- 1 jalapeño, deseeded and deveined
- 1/4 cup lightly packed cilantro
- 2 garlic cloves
- 1/2 small shallot, chopped
- 1/2 small avocado, pitted
- 1/2 tsp sea salt
- 2 lbs flat iron steak
- 1/2 tbls sea salt
- 1/2 tbls pepper
Directions
- Combine all ingredients in a blender and purée until smooth.
- Remove steak from fridge and let come to room temperature, about 20-30 minutes. Season with salt and pepper.
- Heat grill to 400 degrees.
- Cook steak for 3 minutes then rotate 45 degrees and cook for another minute to create crisscross pattern.
- Flip and cook for another 3 minutes then rotate another 45 degrees and cook for one final minute for medium rate.
- Let steak rest for 10 minutes until cutting into it.
