One of my favorite local restaurants makes this amazing loaded mashed potato bake. I am obsessed with it and order it any time I go there. I’ve been wanting to make it paleo for a while but kept going back and forth between making it with cauliflower or white sweet potatoes. I am so happy I went with the white sweet potatoes because I think they keep the integrity of the original dish best. My loaded mashed potato bake is filled with bacon, chives and garlic for a delicious and hearty side dish. I will definitely be serving this as a side for my family’s Christmas dinner. We always have prime rib crusted with my mom’s prime rib seasoning, which I recreated for my blog a few years ago. It combines instant coffee, garlic, onion powder and celery seed. It is the perfect amount of seasoning to make a flavorful crust on the prime rib.
I have attempted to go Christmas shopping twice now, and I have come away empty handed both times! I cannot for the life of me decide what I want to get my family. Last year I made everyone homemade beauty products, which were a big hit! I thought I would mix things up this year and try to find the perfect gift for each of my family members. Unfortunately I come from a big family, which makes buying 12 perfect gifts really hard! If I can’t find anything soon, I will be scouring the internet for unique, DIY gifts for hours on end. What is your favorite homemade gift that you have received? Or what is your favorite homemade gift to give? I was thinking about making cookie mixes in mason jars, but with my family they would probably prefer to just have the cookies already baked. I wouldn’t mind a fresh plate of paleo cookies for Christmas!
Ingredients
- 2 lbs white sweet potatoes, peeled and diced, about 7 cups
- 2 tbls ghee
- 1/2 cup coconut milk
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 garlic cloves, minced
- 4 crispy bacon slices, chopped, about 1/2 cup
- 2 tbls chives, minced
- 1 egg, whisked
Directions
- Heat oven to 375 degrees.
- Place diced sweet potatoes in a pot of water. Bring to a boil and cook for 10-15 minutes or until potatoes are fork tender.
- Drain potatoes and add ghee, coconut milk, salt, pepper and garlic to pot. Use an immersion blender to beat potatoes until smooth.
- Stir in bacon and chives.
- Stir in egg.
- Spoon potatoes into greased 1-quart or approximately 9x7" dish and bake for 30 minutes.

Oh my stars, this looks and sounds delish! I love loaded mashers and can’t wait to try this out 🙂 I may have to make it when we head to my hubby’s family in Missouri this Christmas. They all eat far from paleo so maybe I could bring a few to the dark side!

Why not just use regular white potatoes or a mix of the two/white sweet & regular. White potatoes are approved for Paleo diet now, have been for a year or so now.

You can definitely use white potatoes for this recipe! I just prefer white sweet potatoes.
