When I first moved to Arizona, I stayed in a hotel for a few days until all my belongings made their way here. There I fell in love with a local cafe serving up gluten-free, wholesome breakfast and lunch. One of my favorite things is the Pitaya Smoothie bowl. I didn’t realize that Pitaya is simply another word for Dragon Fruit. Either way, I am now obsessed with dragon fruit. It’s vibrant purple pink color is absolutely breathtaking. I created this Tropical Dragonfruit Smoothie Bowl to highlight the slightly sweet flavor of the dragonfruit by complementing it with tropical flavors of pineapple and kiwi! I love how quick this Vegan Tropical Dragonfruit smoothie bowl comes together. It makes for the perfect quick breakfast, not to mention beautiful!
This summer has been crazy. First I have been learning to deal with the insane Arizona heat. I can stand about 1 hour hanging out at the pool in 110+ degree weather before I am absolutely dying! I am trying to get a healthy tan so I don’t stick out so much! A big thing for me though is practicing safe sun. I give myself about 15 minutes of unprotected sun before slathering up with my favorite Beautycounter sunscreen. I love being in the sun and I can’t wait for it to cool off here in AZ so I can enjoy it a bit longer. Somehow out of my whole family, I was blessed with freckles. I thought of my freckles as a curse growing up and loath my speckled skin. Now it is one of my favorite attribute because they are just “me.” So weird how things can change with time! Ok I am done rambling. I am off to enjoy my night and watch the USA women’s gymnastics on the Olympics!!
Ingredients
- 1 dragon fruit smoothie packet
- 1/2 frozen banana
- 1/2 cup pineapple juice
- 1 large kiwi, diced
- 1/2 banana, sliced
- 2 tbls shredded coconut
- 1/4 cup diced pineapple
Directions
- Place smoothie packet, frozen banana and pineapple juice in a blender and mix until smooth.
- Top with kiwi, banana, shredded coconut and pineapple. Feel free to add more fruit topping!
