Mayo-free BLT Coleslaw

Mayo-free BLT Coleslaw | Plaid and PaleoI’m back from vacation and playing some serious catchup! It is the busy season at my job plus I have something special in the works. I’m super excited but exhausted, which is funny since I just spent a week at the beach. I am so happy that summer weather has finally hit! It means I’ll be firing up my grill and getting ready for backyard barbecues. I love having friends over for a potluck party with all the fixings.

One of my favorite things to make is this BLT Coleslaw! It combines salty bacon, sweet cherry tomatoes and classic coleslaw for a fun twist on the traditional bbq side dish. The best part is there isn’t any weird ingredients in this BLT coleslaw. It travels well and makes the perfect addition to any dinner.

Who here loves the beach? Even though I just left the beach Saturday, I already miss it. There is  something in my soul that can only be filled by the sound of waves and soft sand between my toes! Confession: I am scared of the ocean. Well not quite so much to ocean but the fear of the unknown. If I can’t see my toes, I get super scared of what might be lurking in the water. Thankfully the water was clear most days except when the storms rolled in. I am already planning my next beach vacation… in my mind. What are your favorite beach?

Mayo-free BLT Coleslaw | Plaid and Paleo

BLT Coleslaw

Ingredients

  • 8 slices bacon
  • 1 bag coleslaw, check for any weird ingredients
  • 1/2 cup light tasting olive oil
  • 3 tbls apple cider vinegar
  • 1 tbls honey
  • 1 tbls dijon mustard
  • 1/4 tsp celery seed
  • 10 cherry tomatoes, cut in half

Directions

  1. Heat oven to 400 degrees.
  2. Cook bacon for 15 minutes or until crispy.
  3. While the bacon is cooking, combine olive oil, acv, honey and dijon mustard in a blender until creamy.
  4. Stir in celery seeds.
  5. Mix coleslaw, bacon, cherry tomatoes and dressing together.
  6. Let sit for at least an hour to let the flavors meld.

    This sounds amazing! I always avoid coleslaw at picnics and BBQs because I can’t stand mayo. I am sure I would love this version!

    Santa Barbara is maybe not my ultimate favorite beach but it’s relaxed and WARM… which is more than I can say for Norcal beaches! >_<
