Guys… and girls… the 100 degree temperatures are already starting here in Arizona, and I am already melting. When the temperatures begin to rise, I find myself gravitating toward no cook meals and side dishes. Coleslaw is one of my favorite summer time side dishes. There is just something about summer barbecues and coleslaw that go hand in hand. This Paleo Sriracha Ranch Coleslaw packs a punch of flavor! My infamous (ha I just made that claim, but anyways) ranch seasoning mixes with the deliciousness that is sriracha for a savory and spicy Sriracha Ranch Coleslaw perfect for any summer gathering. I am hoping to do a little grilling this summer, but it is so hard here in Phoenix. You either have to wake up really early or wait until the sun goes down unless you want to break a sweat from just walking outside. I prefer the latter only because I really am not much of a morning person! What is your favorite thing to grill in the summer?
This past weekend I was in Colorado for a friend’s wedding. It was so gorgeous and every detail was the epitome of boho elegant. I love Colorado so much. From the Rocky Mountains to the crisp air and amazing restaurants, every trip makes me fall in love with the state even more. Being in a long distance relationship is rough. It is hard to go back and forth and only see the person I love in short spurts. Going long distance to being in the same state to back to long distance in less than two years is exhausting. I am excited to start our lives together, but we just have to wait a bit longer. They say the best things are worth waiting for, right?? That better be right!
Ingredients
- 1/4 cup Primal Kitchen Mayo, or vegan mayo
- 1 tbls apple cider vinegar
- 2 tbls ranch seasoning
- 2 tbls Sriracha
- 1 bag coleslaw mix
- 1/4 cup green onions, sliced
Directions
- Mix mayo, vinegar, ranch seasoning and Sriracha in a large bowl.
- Add in coleslaw mix and toss until fully coated. Place in the fridge for at least 20 minutes to let the flavors meld.
- Top with green onions and serve!
