Grain-Free Raisin Bran Cereal

Grain-free Raisin Bran Cereal | Plaid and PaleoI have been craving cereal lately. Maybe it is because I haven’t eaten cereal in years and want a quick breakfast. Or maybe I just miss the crunch. Either way I had a strong craving for Trix the other day. Like weirdly strong. I could recall the flavor of a cereal I haven’t eaten in probably a decade. I hopped onto Google and you would never believe there is a recipe for Paleo Trix! You need to check out Brittany Angell for all sorts of amazing baking creations! Since Trix were already covered, I decided to recreate a cereal I also used to weirdly love as a kid- Raisin Bran Cereal. Yup the wheaty-cardboard cereal with raisins not chocolate was a childhood favorite of mind. The more raisins the better was my preference. I was the kid who loved when all the other kids passed over the oatmeal raisin cookies. More for me. I guess I just really liked raisins as a kid. I still do but in moderation. Even the unsweetened kind are pretty sweet to me now. I even recreated my love of oatmeal raisin cookies in my N’Oatmeal Raisin Shake!

I love my crockpot, and I am more than happy to come up with more easy and delicious crockpot recipes. If there is anything you want to see more of, please leave me a comment and let me know!

Grain-free Raisin Bran Cereal | Plaid and Paleo

Grain-Free Raisin Bran Cereal

Ingredients

  • 2 cups roasted almonds
  • 1 cup walnuts
  • 1 cup shredded coconut
  • 1/4 cup flax meal
  • 1 cup raisins
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • Extra raisins, for serving

Directions

  1. Heat oven to 250 degrees.
  2. Soak raisins in warm water for 2 hours.
  3. In a blender, mix almonds, walnuts, coconut and flax until a gritty flour consistency.
  4. Dump contents into a large bowl.
  5. Drain raisins and add to blender with coconut oil, vanilla, cinnamon and salt. Mix until smooth.
  6. Thoroughly combine the wet and dry ingredients.
  7. Line a rimmed baking sheet with parchment paper and spread out batter evenly.
  8. To do this, place another sheet of parchment on top of the batter and press it down with you fingers. Then use a small rolling pin to even it out.
  9. Bake for 40 minutes then remove from oven.
  10. Use a pizza cutter to create small squares then return to the oven for 15 minutes.
  11. Turn off the oven and let the cereal crisp for one hour.
  12. Use a knife to gently break apart the cereal into small squares.
  13. Eat plain or with almond milk and an extra sprinkle of raisins.

    oh yum yum yum. I used to love me some raisin bran. I’d always eat the flakes and save the raisins for last. Can’t wait to try this!

    What would I substitute the flax meal with? My husband is allergic to flaxseed.

      I have not tried it, but I think almond meal would work as a substitute.

    Hi,
    Wanted to say that Raisin Bran is also my favorite, that and Fruity Pebbles, I love the lemon flavor in that cereal!!
    But, since I can’t eat gluten or wheat anymore (I sort of don’t feel the need to get tested, ’cause even if I am only allergic to wheat, it still doesn’t make it easy, since everything store brought is still laden in breadcrumbs made with wheat, and even Rye and Barley breads have wheat flour in them. Even Oat bread has wheat), I’ve been craving for this cereal, but I still can’t make it because Almonds are expensive, and Raw almond are even more expensive, you’d think that because they go through one less process that they’d be cheaper, but no!

    I would also soak my almonds overnight 😉 or sprout them 😉 I’d buy them raw, but I live with my parents and it’s my dad’s money, which my mom has a had enough time trying to make ends-meet, but it’s not me who throws most of the crap in the cart 😉
    Love your blog!! I love that you have paleo meals for one, as I am the only one who’s not eating wheat. And now, I have to avoid nightshades, mostly peppers and I’m think Tomatoes, I can’t even smell cooked peppers without getting instant flash of indigestion, yuck!
    Maybe I’d try peppers if they were organic, but I’m thinking all nightshades should’ve been banished, but that’s just me! 😀

      This can be stored in an airtight container on the counter for up to 2 weeks!
