For me the Fourth of July isn’t the same without cobbler. Summer is the season of berries, which is the best time of year in my opinion. I love berries especially cherries and blueberries! I bought a huge bag of cherries on sale and knew I wanted to make a cobbler. I called up my mom for her recipe because if I was going to make cobbler I knew I wanted to start with my favorite. I made a batch and it turned out good but I knew I could make it better.
I made some tweaks and added a few things and bam perfection! The two cobblers might look a little different because I tried two different cooking methods. My mom promised if I put the batter in the bottom it would rise to the top as it cooked. While I did believe her, I didn’t know if my additions would make it too heavy. So I did one with the batter at the bottom and one with the batter spooned on top. Both turned out great but I like the texture created from putting the batter on the bottom. It is also just cool that the batter rises to form the crust. This cherry berry cobbler is sure to be a hit. I already have plans to make it again.
Ingredients
- 2 tbls coconut oil
- 3 tbls honey, divided
- 1/2 cup almond flour
- 1 tbls coconut flour
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut milk
- 1 egg
- 3/4 cup organic blueberries
- 3/4 cup cherries, pitted and cut in half
- 1/2 tbls arrowroot powder
- 1/2 cup cranberry juice, I like this brand
Directions
- Heat oven to 350 degrees.
- Grease two 6-inch ramekins with coconut oil.
- With an electric mixer, cream together coconut oil and 2 tablespoons honey until light and creamy in a large bowl.
- In a small bowl, stir together almond flour, coconut flour, baking soda and salt.
- Add flour mixture alternately with coconut milk to creamed coconut and honey.
- Add in egg and mix until smooth.
- Scoop half of mixture into each ramekin.
- In a small bowl, mix together fruit, arrowroot and honey. Then pour in cranberry juice.
- Spoon mixture over batter.
- Bake for 35-40 minutes or until a toothpick comes out clean. The batter will actually rise to the top of the cobbler.
- Serve as is or with a scoop of paleo ice cream.

Not sure what I did wrong, bug it turned out way to runny and black in color. Maybe I wasn’t supposed to put in all the cranberry juice. It was mushy but good. Will try again without the cranberry juice

Did you use fresh or frozen fruit? Frozen fruit can produce a lot more juice which could make it runny. Also did you put the batter at the bottom of the ramekin or at the top? I really want to find out what happened to make any suggestions/ additions to the recipe!

I used fresh fruit, put the batter at the bottom, spooned the fruit on top and then added the remaining liquid of the cranberry juice, which i was not sure about. Maybe I should have omitted the final step
