Crockpot Hatch Chile Chicken Tacos

Crockpot Hatch Chile Chicken Tacos | Plaid and Paleo I asked. You responded. Here it is! A new crockpot meal. Crockpot Hatch Chile Chicken Tacos. I love cooking in my crockpot (or slow cooker if I am being technically correct). Some of my favorite crockpot meals include my Spicy Mustard Chicken, Mississippi Roast and Tom Kha Yum Soup. My local Whole Foods recently held a big event where they roasted fresh hatch chiles. I bought a ton and promptly put them in my freezer while I brainstormed ideas. I love hatch chiles and only in the last few years did I discover you could buy them fresh and not in the can. I still use the can version sometimes but the fresh roasted hatch chiles have an amazing flavor! If you can find them at your local grocery store, I definitely recommend stocking up and freezing them for later use.

I love how the fresh roasted hatch chiles bring an extra spice to this dish! A sprinkle of cool cilantro adds a bright bite to pair with the savory and spicy chicken. I modeled this recipe from a family favorite white chicken chili recipe that I thought would make amazing tacos! The 3-ingredient tortillas are from my upcoming ebook, but you can use any paleo tortilla recipe or eat this over cauliflower rice as a taco bowl for Whole30.

Crockpot Hatch Chile Chicken Tacos | Plaid and Paleo

Crockpot Hatch Chile Chicken Tacos

Serves 4-6.

Ingredients

    Ingredients
  • 2 lbs chicken breasts
  • 1 tsp cumin seeds
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 cup chicken broth
  • 2 tbls lime juice
  • 1 cup onion, chopped
  • 1/2 cup fresh roasted hatch chiles
  • For serving:
  • Tortillas
  • Cilantro

Directions

  1. Place chicken into bottom of crockpot.
  2. Sprinkle seasoning on top.
  3. Then add in chicken broth, lime juice, onions and hatch chiles.
  4. Cook on low for 5 hours.
  5. Shred chicken and cook for another 30 minutes
  6. Serve in tortillas with a sprinkle of cilantro.

Notes

For whole30, eat as a taco bowl over cauliflower rice. If you can’t find fresh hatch chiles, you can use the canned variety.

    how do you freeze the hatch chiles? my whole foods is having that event soon.

      I froze mine whole, but next time I think I would deseed and chop them up a little before freezing in little bags!

      Freezing chiles with seeds makes them spicier over time. If you don’t want them to get hotter, peel/deseed/chop put in ice cube trays and freeze. Once frozen, pop the cubes and store in a ziplock. Then you can heat up what you want on demand!!

    This recipe was fantastic! I used whole wheat tortillas and added black beans on the taco. Will definitely make again.
