It’s Meaty Monday! I know Mondays can be a drag since the weekend is over, but I hope Meaty Mondays make them a little better. I’ve been loving this series because I do cook a lot of meat dishes. I’m trying to incorporate more simple meals back into my blog. When I first started blogging, I lived alone. When you live alone, easy meals are key! Spending three hours in the kitchen to just eat alone feels kind of sad sometimes. Now that I am in Oklahoma, I’m close to my family who is almost always up for trying my dishes. While I love having taste testers, it has meant exploring some more complicated recipes I never wanted to cook when it was just for me.
I’m working on developing more recipe with less than 7 ingredients. Plus salt and pepper because everyone should already have those! This balsamic beef contains only 5 ingredients but comes out packed with flavor! This is a great meal to put in your crockpot before work, and it will be ready by dinner. Serves 4.
Ingredients
- 2 lbs boneless chuck roast
- 2/3 cup beef broth
- 1/3 cup balsamic vinegar
- 1/4 tsp sea salt
- 1 tbls coconut aminos
- 1 tsp liquid smoke
Directions
- Place roast in bottom of your crockpot.
- Pour all other ingredients on top.
- Cook on low for 8-10 hours. Mine was done after 9 hours.
- You will know it is done when it basically falls apart with a fork.
- Shred then cook for 30 more minutes.

What balsamic vinegar do you use? I get an “address invalid error” when I click it. Sounds like a great slow cooker recipe. Can’t wait to try it!

So sorry about that! I fixed the link. I use the Lucini brand or any from the Modena region. Just make sure to check the ingredients. Sometimes companies sneak in sugar!

What could you replace liquid smoke with as we don’t have that product in Australia

I think either 1 teaspoon smoked paprika or 1/2 tsp chipotle powder would be a nice replacement!

Did you sear the roast before putting it in the crockpot?

Nope I just put it straight into the bottom of the crockpot!
