Coconut Chicken Tenders

Coconut Chicken Tenders | Plaid and Paleo

These coconut chicken tenders never disappoint as one of my go-to dishes for lunch or a quick supper. I have fun creating different dipping sauces to mix up the flavor, peach mustard, spicy ketchup aka ketchup and franks mixed together, and bbq sauce. I like to pair my coconut chicken tenders with some kind of vegetable as a side. My favorites are honey carrots, baked sweet potato and roasted broccoli. 

There are very few ingredients in these tasty coconut chicken tenders that make them even better! Many times if a recipe has more than 20 ingredients, my eyes just glaze over. Costs can add up when you need a ¼ teaspoon for five different spices you didn’t have! Sometimes I like to add a tablespoon of Frank’s hot sauce to the egg wash for another boost of flavor. Hot sauce seriously makes everything better! Am I right?? I might have a small hot sauce obsession. I love Franks, Tessemae’s and Tabasco.  What is your favorite?

Update: I still love these coconut chicken tenders! I started double dipping them in the egg wash and coconut mixture for an extra crusty coating!

Coconut Chicken Tenders | Plaid and Paleo

Paleo Coconut Chicken Tenders

Ingredients

  • 1 lb chicken tenders
  • 3 large eggs
  • ½ cup coconut flour
  • ½ cup unsweetened shredded coconut
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp fresh ground pepper

Directions

  1. Preheat your oven to 375 degrees.
  2. In a shallow dish, beat eggs until frothy.
  3. In the another shallow dish combine coconut flour, shredded coconut and seasonings.
  4. Dip stripes into the eggs then toss chicken in the coconut breading until it is fully covered.
  5. Place stripes back into the egg wash then toss for a second coating of coconut.
  6. Place coated chicken on a rimmed baking sheet with a wire rack on top.
  7. Cook for 10 minutes then flip chicken and cook for another 10 minutes.
  8. Turn on your broiler and cook for 2-3 more minutes until browned.

    I love this chicken tender recipe, and so did my kids. I cooked them in a glass dish. Do you think they would be crispier if I cooked them on a metal sheet? They were so easy to make for my kids. Thanks.

      Hi Wes,

      They would definitely be crispier on a metal sheet. You could also put a wire rack on the metal sheet. This allows for even heat distribution to all sides of the tender!

    Just wanted to say thanks for this recipe! I’m a college student and am always looking for easy, quick, yummy recipes – and this fit the bill!

    Due to Whole30 restrictions, I dipped this in The Clothes Make the Girl’s Sunshine Sauce. Yum!
