The idea of roasting a whole chicken felt very daunting to me. I roasted a whole turkey once before for Friends-giving, which was a somewhat comical experience. Needless to say after spilling almost all the turkey drippings on the floor and then breaking an entire bottle of wine, I steered clear of any big production meals by myself. That was almost three years ago, and I felt it was time to give a whole bird another go! Research is always key for me when trying a new method or recipe. I tend to lean toward easy instructions.
Turns out- roasting a whole chicken isn’t very hard!! I couldn’t believe all I had to do was rub the spices on, marinate the bird for a couple hours and stick it in the oven for a couple more hours. It is seriously that easy! Only problem is I will be having chicken for awhile. A whole chicken is a lot for one person. Good thing it’s delicious. I used a chipotle orange seasoning, but I can’t wait to try other spice rubs and marinades now that I know it is so easy. PS: you have to eat the skin! It is out of this world.
