Another round of leftovers! I greatly underestimated how much chicken is in a whole chicken. For one person, it is literally enough chicken to feed me for a week or two. Using my BBQ leftovers from here, I decided to make some pizza! Big decision time- cauliflower crust, almond flour crust or coconut flour crust. I went with an interesting recipe that combines cashews, coconut flour and almond flour. It turned out amazing! I could have eaten just the crust. This leftover recipe gets an A+ in my book! Any leftover chicken works great for this recipe, but you can always cook up some fresh chicken too.
Ingredients
Red onions, diced
Pizza crust recipe here
BBQ chicken here
BBQ sauce here
Directions
Heat oven to 350 degrees and follow directions for crust. Mix leftover BBQ sauce and BBQ chicken with diced red onions. After pizza crust is cooked (12 minutes), spread BBQ mixture evenly over the crust but not too close to the edges. Return to oven for 10-15 more minutes. Remove and let cool for 10 minutes. This will help the crust crisp up a bit more.
