I’m excited to be sharing another recipe from my ebook, Paleo for One. This Flavorful Flank Steak recipe is near to my heart because it is an adaptation of my mom’s flank steak recipe. Flank steak was one of my absolute favorite meals when I was growing up. If my sisters and I had our way, we would eat my mom’s flank steak for every meal!
This flank steak is part of the “Remix Recipe” portion of Paleo for One. Cooking for one can mean eating the same leftovers over and over again. In the ebook, I show you how to cook one large cut of meat and remix it into 4 new recipes to eat throughout the week! This flank steak is used in Gingered Steak Salad, Skillet Steak Fajitas, Steak & Mushroom Stuffed Peppers, and finally in Steak and Eggs. In the ebook, I also show you how to remix shredded pork cooked in the crockpot, and how to cook a whole chicken then portion the meat out for new recipes!
The second part of Paleo for One features small portion meals that are perfect for one or two people. Sometimes you just want enough food for one night! There are recipes for breakfast, main course, sides and treats. I’ve adapted fan favorite recipes from my blog down to smaller portions and also cut down on the ingredient list. Ingredients
- 1 1/2 lbs flank steak
- 1/4 cup coconut aminos
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 2 tbls fresh ginger, minced
- 2 tsp fish sauce
- 1 tsp garlic, minced
Directions
- Mix coconut aminos, olive oil, rice vinegar, ginger, fish sauce and garlic together in a large ziplock bag.
- Place flank steak into bag and place bag into refrigerator. Make sure the marinade fully covers the steak.
- Let marinate overnight.
- Pull marinated steak from fridge and let come to room temperature for approximately 15-30 minutes.
- Heat grill to medium-high approximately 400-425 degrees.
- Place steak on grill and cook with the lid down for 5 minutes, flip and cook for another 4-5 minutes.
- Remove steak from grill and let rest for 10 minutes.
- Cut steak against the grain in thin diagonal slices and serve.
