While in Austin, I did a little ice cream crawl with my fellow bloggers. As a recovering ice cream addict, I take my ice cream very seriously. I tried both Dolce Neve and Lick, and I am happy to report both were delicious! At Dolce Neve, I had the Chamomile Pistachio Ice cream and Chocolate with Candied Oranges. Both flavors were decedent, but I knew immediately I wanted to recreate the chamomile pistachio ice cream. The subtle chamomile flavor paired perfectly with the pistachios. A dash of salt adds the perfect counterpart to the sweet honey. At Lick, I had the avocado coconut and lemon curd. Both flavors were so creamy, and I couldn’t believe they were dairy-free!
Welcome to part two (finally) of my Paleo f(x) recap! You can check out part one here if you missed it. After I left 24Diner, I headed to the convention center and hit up Cassie from Fed + Fit cooking demo then Diane Sanfilippo’s talk on “How to Market Your Passion.” This was one of my favorite sessions, and I felt like a really learned a lot. My biggest take away was this quote from Diane. “What lights you up? Do that.” This struck a cord with me. Before starting my blog, I was in a job that made me miserable! I worked all the time and hated it. Leaving that job, my “dream job,” was one of the best things to ever happen to me.
Back to Paleo f(x), I spent the majority of the day walking around the Expo floor meeting with my favorite brands and eating way too many samples. I wanted to save up for dinner since a group of bloggers were going to the Salty Sow for dinner. OMG. This place was amazing. We ordered the Charcuterie and Cheese Board for the table. The chicken liver mousse would convert any skeptic to a believer! I ordered the special Farm Salad, Truffled Deviled Eggs and the Mr. Shaw to drink. My friend ordered the Triple Fried Duck Fat Fries wit ha 110-minute egg and let me try a few. I don’t know how one goes about making a 110 minute-egg but I must learn. These fries could possibly be the best fries of my life. After an amazing dinner that I will be dreaming about for years, a few of us headed off the Rainey Street to check out the Austin nightlife. This street is so cute! I felt like I was at a friend’s backyard BBQ just hanging out. Austin is a very special city. Definitely one of my favorite cities in the US.
One of my tea bags broke a little but I decided to keep the leaves; however, you can run the mixture through a fine sieve after step 5.
Ingredients
- 14-oz can full-fat coconut milk
- 7 chamomile tea bags
- 1/4 tsp sea salt
- 2 eggs
- 1/4 cup water + 1/2 tbls gelatin
- 3 tbls honey
- 1/3 cup pistachios , roughly chopped
Directions
- Pour coconut milk into a sauce pot and bring to a simmer. Add in 5 tea bags and remove from heat and let seep for 45 minutes.
- While the tea bags are seeping in the coconut milk, heat 1/4 cup of water for 30 seconds in the microwave.
- Add 2 remaining tea bags and let seep for 20 minutes. Squeeze out liquid and reheat for 30 seconds. This should leave you with 2 tablespoons of liquid.
- Stir in gelatin until dissolved.
- Back to the coconut milk, squeeze out all coconut milk from tea bags and discard.
- Turn the heat back on to medium and add in eggs. Whisk until fully combined.
- Add in tea gelatin mixture.
- Remove from heat and add in the honey then place mixture on top of a bowl of ice. Stir occasionally until the mixture cools completely.
- Once custard is cool, pour into your ice cream maker per manufacture’s instructions. My ice cream took approximately 25 minutes.
- After 15 minutes, add the pistachios.
- Right out of the ice cream maker, the mixture is closer to soft serve. For a firmer ice cream, place in the freezer for an hour.
