I am still coming down from my Paleo f(x) high. Austin is a truly amazing city. From the food to the atmosphere, I fall a little more in love with Austin every time I visit. This year I stayed in a house with a group of paleo bloggers. It was so much fun and definitely the way to go! The first order of business was a trip to the motherland aka Whole Foods Headquarters. This Whole Foods is the mecca of all Whole Foods. I probably could have spent half a day wondering around the store.
The next morning started with a trip to Picnik. It was just as amazing as I remembered. I ordered the Dirty Chai and a slice of frittata. Picnik is a paleo-friendly food truck and is an absolute must if you are visiting Austin. From there, it was off to Paleo f(x). The first session was one of my absolute favorites. Michelle Tam and Gregory Gourdet, of Top Chef fame, discussed umami, and how to add it to your dishes. I fan-girled over Greg like a weirdo, but his food is seriously amazing. The session also won major bonus points for giving out samples of Red Boat fish sauce and salt! Next up was the session “Friends, Family and Food” by Melissa Hartwig of Whole30. It was a great session on how to rephrase Paleo from a strict set of no’s to showcasing it as a nutrient-dense diet with real food. I spent the rest of the day walking around the Expo floor eating way to many samples. It was so fun though to meet the teams behind my favorite brands and try new brands!
The next morning I finally tried 24 Diner. It completely lives up to the hype! I ordered the sweet potato hash, which was filled with roasted poblano peppers and sausage. I knew immediately that I needed to recreate this dish when I got home. When I first started eating paleo, I am pretty sure sweet potato hashes helped me survive those first few months. This roasted poblano, sausage and sweet potato hash combines savory, spicy and sweet for the perfect combination. Savory sausage, slightly spicy poblano peppers with sweet potatoes make the perfect base for eggs! Stayed tuned for more Paleo f(x) updates!

Poblano peppers are in full season at the farmer’s markets here in Florida — I will have to snag some this Wednesday so I can make this! Looks amazing 🙂
