Dairy-free and cheese in the title might be a little confusing but hang in there with me. For as far back as I can remember, my family has been eating cheesy potato soup. It is a family favorite from my grandma to my little nieces. Unfortunately our cheesy potato soup is as far from paleo as you can get. The original ingredients included condensed cream of potato soup, flour, cheddar cheese and sour cream. I’ve been wanting to make this paleo for a while but honestly didn’t know where to start. All the ingredients seems so far from paleo, I was worried it wouldn’t taste anything like the original when all was said and done. I’m happy to report this dairy-free cheesy potato soup is just as good as the original! I could not be happier this recreation worked. Now I can still have one of my favorite dishes with my family and not be sick at the end of it.
Who else has done zero Christmas shopping? Yup zilch. None. Nada. I really want to shop local this year but I always get so conflicted what to get my family members. Also I now have four nieces and a nephew and little kid presents add up quick! I’m thinking about going the book route this year. If anyone has any suggestions of good kid book ranging for kids 1-8 years old, I’d love to have them!
Ingredients
- 2 tbls ghee
- 2 celery stalks, chopped
- 2 carrots, grated
- 2 green onions, green part only, thinly sliced
- 3 cups white sweet potato, peeled and medium diced
- 3 cup chicken broth + 1/2 cup
- 1 can coconut milk
- 1/4 cup tapioca starch or arrowroot
- 1/4 cup water
- 2 tbls nutritional yeast
- 1 tsp apple cider vinegar
- 1/2 tsp sea salt
- 1/4 tsp pepper
- Optional: franks hot sauce and extra green onion
Directions
- In a large stock pot, melt ghee and sauté celery, carrots and green onions for about 3 minutes. Add in 3 cups of chicken broth, coconut milk and white sweet potatoes. Bring to a boil, cover and cook for 10 minutes or until potatoes are fork tender.
- In a small bowl, mix together tapioca and water until dissolved.
- Pour a little liquid from the stock pot to bring the tapioca water up to temperature.
- Add to soup, along with nutritional yeast, acv, salt and pepper.
- Cook for 5 minutes then add final 1/2 cup chicken broth.
- Serve with a dash of Franks hot sauce and green onions.

Do you think arrowroot would work in place of the tapioca starch? otherwise, I think i might make this tonight! its a cold, rainy night up here in the northeast. at least the snow just missed us?

I sent you an email, but just in case I definitely think arrowroot will work in place of tapioca! The rain missed us in the Midwest but it was very foggy and gloomy all last week.

This looks so good, and I love those ramekins! I have the same ones and use them all the time. Also I babysit a girl who is 4 years old as she loves this book called the book with no pictures. That’s a cute one for kids who can’t read by themselves yet.

I made this with baking potatoes, since white sweet potatoes were not available…and am tired of regular sweet potatoes. Added a regular onion to the vegetables in a doubled recipe. Lovely!!
Please note that the directions do not include adding the Coconut milk. I added it at the end and that worked well.

When you say white sweet potatoes, do you mean Japanese white with the purple skin or the golden sweet potato?

I have used both, but I typically use golden sweet potatoes!

It is also called Brewer’s Yeast, but I’ve had lots of readers make it without the nutritional yeast and love it!
