Crockpot Tropical Mango Pork | Plaid and Paleo
I have been busting out my crockpot a lot lately. I know most people think crockpots are only for the winter, but I love using mine in the summer. My oven makes my apartment HOT! Making meals in my crockpot keeps my apartment at a comfortable temperature, and I get a delicious meal at the end. This Tropical Mango Pork is so good! The sweet mango pairs with fire-roasted tomatoes and orange juice for a flavor packed pulled pork. I ate this tropical mango pork with my friend Jenny’s tostones recipe, in tacos topped with more mango and avocado and as the base for steamed eggs. I love remixing my leftovers!

Thanks for coming back to my final Paleo f(x) recap. You can find part one here and part two here. On Sunday, I joined in a huge Paleo potluck breakfast that was absolutely amazing! After stuffing myself full, I headed over to the conference to watch a cooking demo, 20 Ways to Make Paleo Easier and ended the day with Mean Girls… Nice Girls, Watch Your Back. I walked around the Expo floor and bought some more goodies from some of my favorite vendors. That night I went to dinner with another group of bloggers at Dai Due. Charcuterie was ordered along with venison ceviche, beef tartare and the most delicious pickled beets. All off this was just to start and then I split the Gulf Squid stuffed with Chorizo and Rice as my main course. It was the perfect end to an amazing weekend. The next morning I made one last stop at Picnik for a dirty chai coffee before heading out of town. Austin is an absolutely amazing city. It is full of culture, delicious food and awesome people. I already can’t wait to go back

Crockpot Tropical Mango Pork | Plaid and Paleo

Tropical Mango Pork

Serves 4-6

Ingredients

  • 1 tbls chili powder
  • 1 tsp cumin
  • 1 tsp ground ginger
  • 14 oz fire roasted tomatoes
  • 1/3 cup tomato paste
  • 1/3 cup orange juice
  • 3 tbls coconut aminos
  • 3lb bone-in pork shoulder
  • 2 tbls ghee
  • 2 mangos, diced

Directions

  1. In a bowl, mix together first 7 ingredients.
  2. Place pork shoulder in bottom of the crockpot and pour sauce over it. Top with 2 tablespoons of ghee.
  3. Cook on low for 7-8 hours until the pork shreds easily.
  4. Shred pork and remove bone from crockpot.
  5. Stir in diced mango and cook for another 30 minutes.

    Yum! This sounds great. And adding avocado to the top (as pictured) sounds like it would only improve things.

    What are coconut aminos?

      They are a coconut product that tastes similar to soy sauce.

    I love using my slow cooker in the summer too! So much easier than coming home from work and heating up the whole kitchen/myself with the oven and stove. Also, yes to party food! You had me at mango + avocado 🙂
