Fall is officially here. The day before the official start of fall, the weather cooled off. I’m still getting used to the changing seasons. In Los Angeles, the difference between summer and winter was a 20 degree spread. The gradual change from 80s to 60s goes almost unnoticed until it is back to 80s. This is not the case in Oklahoma. In one day, we can have a 20 degree swing. The forecast claims it will be in the 80s for at least another week, but I don’t believe it! I am already reaching for my layers to stay warm.
I nixed caffeine in the afternoons years ago to help me sleep better, but as the weather turns cold I find myself craving a warm mug in the later afternoon. I’ve started dabbling with drinking match green tea lattes. I still haven’t found the perfect recipe for my taste, but I love experimenting! Matcha has a slightly earthy flavor which can be a little off putting if not paired with a little sweetness. I’ve been wanting to make a paleo granola recipe for a while now. Mainly because I ate all my WholeMe almond clusters and have been craving that extra crunch in my diet. This matcha granola is not only tasty but also nut-free and gluten-free!
Ingredients
- 1 cup pepitas, shelled pumpkin seeds
- 1 cup sunflower seeds
- 1/2 cup flaxseed meal
- 1 tbls matcha green tea powder
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp sea salt
- 1/4 cup maple syrup
- 1/2 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup golden raisins
Directions
- Heat oven to 300 degrees.
- In a blender or food processor, mix pepitas and sunflower seeds until slightly broken down, about 10 pulses.
- Pour into large bowl with all remain ingredients except raisins.
- Chop raisins in your blender or food processor until they start to form a ball.
- Mix into all other ingredients.
- Spread evenly onto a parchment lined baking sheet.
- Bake for 25 minutes.
- Let cool completely then break apart and store in an airtight container.
