Carrot Ginger Meatballs

Carrot Ginger Meatballs | Plaid and PaleoGuess what?! Today is my birthday! To celebrate I figured I would share one of my favorite new recipes! These carrot ginger meatballs are out of this world! I am not exaggerating at all. Most people might celebrate with sweets, but I wanted share something you can enjoy any day of the year. The shredded carrot inside the meatballs add a sweet flavor and stretches your meat to make 20 meatballs! Let’s not kid though. I had paleo crepes for my birthday breakfast!

You know when people look back and say (insert age) was the best year ever, hopefully (insert age +1) will be even better. This sentence is normally followed by a little humble brag of all the good things that happened in said best year ever. Well I wouldn’t say twenty-six was my best year ever. It was rough at times, but it was also pretty great. Key the recap of the highs and the lows. I moved from Los Angeles. The city I love and saw myself growing old in. I moved to be closer to family and focus on my writing. This year also brought a lot of good. I completed my first Whole30 in January! Woo! Then this summer I set off on my adventure of a lifetime. I’ve been dreaming of traveling for years but the fear of going at it alone always kept me secure in the boarders of America. In May I hopped on a plane and hoped for the best. The result was an incredible trip I will never forget and the friends I made along the way. So yeah 26 has been good but hopefully 27 will be even better! Sorry I couldn’t help myself.

Carrot Ginger Meatballs | Plaid and Paleo

Carrot Ginger Meatballs

Serves 3-4

Ingredients

  • 1 lb ground pork
  • 2 cups shredded carrots, about 2 large carrots
  • 1 tbls coconut aminos
  • 1 tbls ginger, minced
  • 3 green onions, sliced thin
  • 2 tsp sesame oil
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 4 carrots
  • ghee, for cooking

Directions

  1. Heat oven to 400 degrees. Mix all ingredients together except last 4 carrots.
  2. Use a cookie scoop to form uniform meatballs then roll then in your palms to make them smooth.
  3. Place on a lined cookie sheet and cook for 20 minutes.
  4. While the meatballs are cooking, use a vegetable peeler to form flat “noodles.”
  5. In a large skillet sauté carrots with a little dab of ghee for 2-3 minutes.

    Would this work with ground beef? I don’t really care too much for pork. I’m asking because I’m not sure how much changing the meat used would affect other necessary ingredients and their amounts. Thanks!

      I think a better option would either be ground chicken or ground turkey because they have a more neutral flavor like pork. I worry that beef might overpower the other ingredients.
