Creamy Watermelon Pops

Creamy Watermelon Pops | Plaid & Paleo
Temperatures are heating up! I love summer. I lived in LA for three years, which basically only has one season- summer. I love spring and fall, but summer is my number one season. With summer comes more time being outdoors, grilling, farmers markets and tons of fresh fruit. When I was little nothing excited me more than biting into a giant slice of watermelon.

For me watermelon is the fruit of summer. Even as an adult, I still love watermelon. I wanted to create fun watermelon treat for adults and kids. My nieces and nephew taste tested these watermelon pops for me and gave me the thumbs up! With only 3 ingredients, the pops are super simple to make and can be frozen in small wax cups. Of course you can put them into popsicle molds if you have them!

PS: That’s my youngest niece Sophie. She’s a cutie, but I’m kind of bias!
Creamy Watermelon Pops | Plaid & Paleo

Creamy Watermelon Pops

Ingredients

  • 2 cups watermelon, cubed
  • 1 can coconut milk, cream from top
  • 1 tbls lemon juice

Directions

  1. Use a large glass measuring bowl to measure the watermelon.
  2. Place watermelon in blender with cream from coconut milk and lemon juice. Mix until smooth. Strain into wax cups.
  3. Chill for 1 hour in the freezer. Then stick in large popsicle sticks.
  4. Chill for another 1-2 hours.
  5. When ready to eat, rub cup between palms to warm the pop slightly. The watermelon pop should slide right out. You can also run warm water over the cup for about 5 seconds.
