When I lived in LA, one of my favorite places was a cafeteria-style lunch spot called Lemonade. Lemonade had a variety of market sides you could mix and match to make your meal. I loved these sides, but Lemonade’s namesake lemonade was always the true star. Some of my favorite flavors included blueberry mint, classic and rosemary watermelon lemonade. I loved the use of fresh herbs mixed with fruit for a delicious and fresh combination.
Years later, I still think about this refreshing lemonade and decided to needed to make it at home! I grew up drinking glassfuls of fresh squeezed lemonade. I love this rosemary watermelon lemonade because it is mainly sweetened with just fruit and just a hint of honey! I love the tart combination of lemon juice, earthy rosemary and sweet watermelon. Also what is more quintessential summer than lemonade and summer??
Ingredients
- 1/2 large watermelon, 5 cups pureed
- 1 cup lemon juice
- 3 rosemary sprigs
- 1 1/2 cups water, divided
- 2 tbls honey
Directions
- In a large sauce pot, combine watermelon puree, lemon juice and rosemary over medium heat.
- Bring to a simmer and cook for 2-3 minutes.
- Let the mixture come to room temperature.
- While the watermelon mixture is coming to room temperature, combine 1/2 cup water and 2 tablespoons honey.
- Simmer for 5-7 minutes or until the simple syrup reduces by half.
- Add simple syrup and remaining 1 cup of water to watermelon mixture.
- Put watermelon mixture through a fine sieve or cheesecloth.
Notes
Depending on the sweetness of your watermelon, you can add more honey to taste.
