Chipotle Coffee Pulled Pork | Plaid and Paleo

You guys. This chipotle coffee pulled pork recipe is so easy and so good! I saw something on Pinterest but it had like 20 ingredients and was zero paleo. How do you replace pop in a recipe?! No clue but I won’t touch the stuff. As I perused the grocery aisles, I threw in a pork shoulder without exactly knowing what I was going to do with it. This is very unlike me. I shop with a fairly strict grocery list of items I need to create specific recipes along with every day needs such a fruit and eggs.

As I brewed my coffee, I thought why not put a little coffee in there. Basically I added ingredients I believed would taste good together. At some point after creating more than 100 recipes I’ve learned to trust my instinct. I am so glad I did. This chipotle coffee pulled pork came out a complete winner! Not to mention it was so easy to make since I threw it in my crockpot. I just love my crockpot. Saves me clean up and makes tasty recipes. If you don’t have one, you should go pick one up. I got mine for $30 from Target almost 4 years ago, and it still works magically. This chipotle coffee pulled pork is amazing with white potatoes, but if you don’t eat those I think it would also taste great with cauli-mash!

Chipotle Coffee Pulled Pork | Plaid and Paleo

Chipotle Coffee Pulled Pork

Serves 4

Ingredients

  • 2.5 lb boneless pork shoulder
  • 1 tbls chili powder
  • 1 tbls garlic powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 cup strong brewed coffee
  • 1 tbls ghee

Directions

  1. Rub seasoning on all sides of the pork shoulder and place into crockpot.
  2. Pour coffee over the pork then add a dollop of ghee.
  3. Cook on low for 8 hours.
  4. Shred with 2 forks then cook for another 30 minutes.

    This may be a ridiculous question, but how do you think it would taste with a beef roast or venison roast? I have lots of those 🙂

    This sounds amazing and I must make it!

      Not ridiculous at all! I am not sure about the venison because it might still be a bit gamey, but I definitely think beef roast would be amazing!

    I made this recipe the other night and I must say, you’re a genius. I couldn’t stop eating the pulled pork, it was just perfect. I used a french roast and it gave it the meat this rich, sweet flavor to it. Cheers!!!

    If I was using a game meat I’d add some extra fat. The pork shoulder is a fatty cut, which is why it’s so great for low and slow cooking.
