With the sweet summer slipping by faster than I would prefer, I am sipping on this Lemon Thyme Spritzer as I gaze out to the setting sun on my back patio. With fragrant lemon thyme from my garden, this spritzer is the perfect late summer drink. If you don’t have lemon thyme that is 100% okay, just swap it for regular thyme!
While my garden is booming, my herbs are definitely giving me trouble. From heat to beating sun and lack of water then too much water, I can never quite get herbs down. In my life, I have sadly killed more than 50 herb plants. Already this summer, my poor cilantro has bit the dust, and I fear my basil might be the next to go. I’m more disappointed about the basil because I had plans to make some mint-basil pesto to toss with zoodles from my bounty of zucchini. Oh well. I moved the pot into the shade and I’m only watering it when the soil is dry so maybe it will start thriving again!
In just a few short days, I am hopping across the pond for a two week European adventure. I’m going to Brussels, Amsterdam, Budapest, Munich and Prague. I still can’t believe the trip is almost here! While I’m there, I am meeting up with two of my friends that I met on my last European adventure more than 5 years ago. On that trip, we vowed to return to Munich for Oktoberfest and now years later, we are doing it! I just need to find my dirndl. Yes, I bought a dirndl in Munich, and I can’t wait to wear it. Show off my true German heritage.

Refreshing Lemon Thyme Spritzer
Ingredients
- 3 oz vodka
- 1 oz lemon juice
- 1.5 oz st. germaine
- 4 springs lemon thyme or regular thyme, removed from stems
- 6 oz club soda
- handful of ice
- 2 - 12 oz glasses
Directions
- Muddle thyme leaves in the bottom of a mixing glass.
- Add in vodka, lemon juice and st. germain. Stir.
- Place a handful of ice into each glass. Pour drink evenly into each glass and top each glass with 3 ounces of club soda.
- Garnish with a thyme sprig and lemon slice to be fancy!
