Grilled Paleo BBQ Pork Chops

Grilled Paleo BBQ Pork Chops | Plaid & Paleo

With summer comes grilling season, which is my favorite season for so many reasons. One because it means that winter is over and warm weather is here to stay for a bit. It also means a break from cooking for me as my husband is typically the one who mans the grill. I have been wanting to make paleo BBQ pork chops for a while, and I finally decided to do it after being inspired by a shipment from Primal Kitchen with Classic BBQ sauce, which is unsweetened as well as organic. For this recipe, you can use your favorite Paleo BBQ or make your own. I have a refined sugar-free, KC BBQ sauce recipe here. An arugula salad tossed with a little olive oil and served with fresh cut peaches is the perfect pairing for these paleo BBQ pork chops. I promise, it is just that easy!

Grilled Paleo BBQ Pork Chops | Plaid & Paleo

This past weekend, we went camping with a group of friends in Guanella Pass near Mt. Evans in the Colorado Rockies. It was our first time camping in the area, but we all agreed that we will definitely be back. We found the perfect campsite with lots of tent location options, a couple of fire pits and back off the main road for privacy. One of our friends cooked the most insane and delicious meal called Lomo al Trapo, which is a Colombia dish. Basically you encrust a beef tenderloin with salt and herbs then wrap it in a damp cloth and cook it over hot coals in the fire pit. I had never seen this cooking method in my life, and I think we were all pleasantly surprised by the results – even the chef. The meat was a perfect medium-rare and packed with flavor from the salt and herbs plus a drizzle of chimichurri sauce. I ate so much that I barely had room for s’mores.

Grilled Paleo BBQ Pork Chops

Ingredients

  • 1.65 lbs pork chips
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3/4 cup bbq sauce, divided

Directions

  1. Place pork chops into a shallow dish. Season both sides with salt, pepper and 1/4 cup bbq sauce. Let marinate in the refrigerator for 1-8 hours.
  2. Heat grill to medium-high heat, around 350-400 degrees. While the grill is heating up, remove pork chops from the fridge and let come to room temperature.
  3. Place pork chops on the grill, close the lid and cook for 4 minutes until the meat easily releases. Flip and cook for another 3-4 minutes until the meat reached 140-145 degrees. Remove from grill and let rest.
  4. Heat remaining 1/4 cup bbq sauce in a saucepan or in the microwave. Slather on the pork chops and serve!
