Summer is here once again. My first day of summer was welcomed with cloudy skies and freezing rain. Oh Colorado, you definitely are confused with your seasons this year. I felt like winter was never going to end, especially after a late May snow, which killed nearly all of my flowers but thankfully my garden seemed to be unaffected.
Whether the weather is waiting to corporate or not, I am in full summer mode, which means grilling and frozen sweet treats like this paleo berry mojito granita. A long, long time ago, I made blueberry mojito gummies, which I still freaking love. That recipe inspired me to make this berry granita combining a variety of fresh berries with mint from my garden, lime juice and a hint maple syrup for sweetness. The sparking water also gives this granita a light and airy texture. Plus you cannot beat this color! Berries are seriously Mother Nature’s gift to us all!

Also I’m so excited to start writing more about my travels on the blog. While I originally started Plaid & Paleo purely as a health food blog way back in 2013, my passions have changed and evolved over time. While I still love cooking and creating recipes, my love of travel has definitely skyrocketed in the last few years. I’m thinking of creating a few city guides along with what I’m packing in my carry-on because let’s be honest, I never check bags (except on my honeymoon when my husband and I shared a checked back because we were gone for two weeks soo….) My first post about Miami Beach is already up, and I am working on my Key West guide right now!
