I’ve been in an egg rut. When I got back from Europe, all I wanted was eggs on eggs on eggs with sides of bacon. Now I am on egg burn out. Usually when I get tired of eggs I turn to paleo pancakes, but I have been craving an acai bowl since my trip to Florida. I had an amazing acai bowl when I was there and couldn’t get it out of my mind. Before I left for Florida, I froze a bunch of fruit that I didn’t want to go bad. This turned out to be perfect to make my acai berry bowl! I found my acai smoothie packets at my local Sprouts but you can also buy them Whole Foods and Natural Grocer.
I’m back from Maine but still in New York. Maine was so much fun and I loved the quaintness of Portland and all the food! After this summer’s adventures I think it is safe to say I love traveling. While I still struggle with my fear of flying, I am not letting it stop be from going everywhere I want. There is so much of the world to see and not to mention my own country. I want to get up to the Pacific Northwest next or even come back to New England when all the leaves change color. What is your favorite close to home vacation?
Ingredients
- 1 acai smoothie packet
- 1 cup pitted cherries, fresh or frozen
- 1/2 cup frozen blueberries
- 1 cup coconut milk
- 1 banana, sliced
- 6 strawberries, sliced
- 1/4 cup paleo granola or chopped nuts
Directions
- In a blender combine acai packet, cherries, blueberries and coconut milk until smooth.
- Pour into bowl and top with sliced bananas, strawberries and granola or chopped nuts.

I used to love acai bowls but I haven’t had any since going paleo. This sounds so good! You have been traveling so much. I’m super jealous 🙂 You should definitely go to the northwest. It’s my favorite!
