Temperatures are heating up here in Arizona, but I am still loving using my slow cooker. When temperatures soar into the 90s and 100s, I actually love using my slow cooker because it means I am not heating up my apartment with the stove or oven! My Slow Cooker Sweet & Spicy Beef combines sweet maple syrup with spicy chipotle chili powder for the perfect mix of flavors. I love serving this slow cooker sweet & spicy beef with roasted broccoli or paired with a baked sweet potato. It makes the perfect, filling paleo dinner! There is just something about making shredded meats in the crockpot. It always comes out so tender and moist. So I took a little break from social media and blogging last week because my grandma passed away. She lived a wonderful long life to 94 years old! I can’t image living almost a century. The world has changed so much in the last 100 years. She lived through the Great Depression, having no indoor plumping, the Dust Bowl, no phones (definitely not cell phones!), no television and no internet. Sometimes I wonder about those simpler times without all the technology. Anyway I spent the weekend with my family back on the farm in Kansas. It was nice to spend time with them especially since I don’t see everyone that often. I love all my nieces and nephew so much! Being an aunt is one of the biggest joys of my life. Watching them grow up is so hard being far away, but I really savored my years in Oklahoma and getting to be close for a bit!
Ingredients
- 1/4 cup maple syrup
- 2 tbls chipotle chili powder
- 1 tbls tomato paste
- 1 tsp sea salt
- 1/2 tsp pepper
- 3 lb beef chuck roast
- 1/2 cup pineapple juice
Directions
- Combine maple syrup, chili powder, tomato paste, salt and pepper into a paste.
- Rub paste over chuck roast and place into slow cooker.
- Pour pineapple juice over meat.
- Cook on low for 10-12 hours.
- Shred meat with two forks and cook for 30 more minutes.
Notes
For less heat, use chili powder in place of the chipotle chili powder.?This meat is great served over a baked sweet potato.
