Growing up root beer floats were a summer staple in my house. As I’ve gotten older, Root Beer Floats still hold a special place in my heart that takes me right back to those hot summers as a child running around outside without a care in the world! Years before going paleo, I swore off pop because the sugar was just too much for me to handle. About a year ago though, I started craving the fizzy goodness that is pop again and went on the hunt to find a better sugar-free soda. That’s when I discovered Zevia, which is sweetened with stevia. You might be wondering, what is stevia? Stevia is a plant-based sweetener that is actually 200x sweeter than sugar. Your next question might be, but is stevia paleo? Something I always want to reinforce that paleo is not a strict, rigid set of rules. Paleo is not one-sized fits all. Paleo is doing about what is right for your body! Okay so this Paleo Root Beer Float is bomb! I think my favorite part is that it fizzes in the same way I remembered from my childhood. That is actually because root beer is made with sassafras, including Zevia’s Ginger Root Beer. One big difference is that Zevia is clear, which I love because it means there are no artificial coloring. I used whipped coconut cream with a hint of vanilla extract instead of ice cream, which not only makes this paleo root beer float dairy-free but also vegan! So cheers. Drink up and take a step back in time to the sweet simplicity of summer time.

Ingredients
- 2 cans Zevia Ginger Root Beer
- 1 can organic coconut milk, popped in the fridge
- 1/2 tsp vanilla extract
Directions
- Scoop separated coconut cream out of the coconut milk can and into a large bowl.
- Mix in vanilla extract and whip with a hand mixer for 3 minutes. If it is too liquid-y, pop mixture into freezer then whip again.
- Pour Zevia Ginger Root Beer soda into two glasses with ice. Top with 2 tablespoons of whipped coconut cream.
- Stir and enjoy!

What a fun idea Vanessa! I haven’t tried Zevia yet but I keep seeing it in the stores, so now you’ve convinced me that I need to try it because I LOVE root beer floats! And my poor kids have yet to have tried them, so maybe they’ll get a special treat this weekend 🙂
