Paleo Cajun Sausage, Sweet Potato and Kale Soup | Plaid and PaleoGuys. This Cajun Sausage, Sweet Potato and Kale soup! I ate this soup for days in a row and got excited before each time! The slightly smokey and spicy sausage pairs with the sweetness of the sweet potatoes and earthiness of the dino kale for a full balanced soup to warm you up on a cold day! A cold front swept across Arizona that had me bundling in layers and searching for my winter sweaters. As I complained to my family back in the Midwest, they laughed at me since it was 45 degrees in Arizona but it was 10 degrees where they lived! I am excited to go home for the holidays, but I am definitely not looking forward to the cold. After living in Los Angeles, I knew that winter was not for me. I suffered through three years of winters in Oklahoma before returning to the warm, mild winters of the Southwest! There is still something to be said about curling up by the fire in a mountain of blankets sipping on some hot coco!

I haven’t been back to Oklahoma since I moved in May. This is a really long time to be away from my family. I miss my littlest niece so much. She was 3 months old when I moved and barely knows me, but she still recognizes my voice over the phone, which melts my heart! I am the aunt to five nieces and a nephew ranging in ages zero to 18! Being an aunt is one of my favorite things! Their little smiles and squeals of delight when I visit makes me the happiest girl in the world! Cajun Sausage, Sweet Potato and Kale Soup

Ingredients

  • 1 tbls ghee
  • 1 cup sweet onion, diced
  • 12 oz cooked andouille sausage links, cut into 1-in slices
  • 4 garlic cloves, minced
  • 2 1/2 cups sweet potato, peeled and large diced
  • 1 tsp cajun seasoning
  • 4 cups lacianto or dino kale or, de-stemmed and cut into strips
  • 6 cups organic chicken broth

Directions

  1. Melt ghee in a large stock pot over medium high heat, add in onions and sauté until translucent
  2. Add in andouille sausage and cook until slightly browned on all sides.
  3. Mix in garlic, sweet potato, cajun seasoning and cook for 5 minutes, stirring occasionally.
  4. Drizzle in a half cup of chicken broth to deglaze the pot and scrap up all the flavor bits with a wooden spoon.
  5. Pour in remaining chicken broth, bring soup to a simmer and cook for 10 minutes, or until sweet potatoes can easily be pierced with a fork.
  6. Remove form heat and stir in kale.
