Gameday Guacamole with Sweet Potato Chips

Gameday Guacamole with Sweet Potato Chips | Plaid and PaleoSo this year, I joined a Fantasy Football League with a group of paleo bloggers! I actually thought I was joining some kind of football food challenge. I really need to work on my reading skills, but I am actually so happy to have stumbled upon Fantasy Football because I am hooked! I now spend my Sundays cheering on my players with friends although I only know what is going on about half of the time. I am a basketball fan, but Fantasy Football is definitely warming me to football! Of course no gameday is complete without an amazing spread of food!

If you know me, you know I love dips! I mean what is a gameday without dips, and the king of paleo dips… guacamole! While I love making my own guacamole, my gameday prep is made 100% simpler with GoodFoods guacamole from Sprouts. Most store-bought guacamole can contain weird ingredients to make it shelf stable, but not GoodFoods. Their Tableside Chunky Guacamole ingredient list reads: Hass Avocados, Tomatoes, red onions, jalapeño peppers, cilantro, lime juice, sea salt and garlic. Just fresh ingredients with nothing to hide. As a quote “professional label-reader,” I really appreciate company’s who are committed to creating products with wholesome, real ingredients!

Gameday Guacamole with Sweet Potato Chips | Plaid and Paleo

My gameday starts by setting up a spread of dips paired with my homemade sweet potato chips! I rotate a trio of gameday guacmole along with a couple greek yogurt dips for my friends who eat dairy! My favorite guacamoles is GoodFoods Tableside Chunky Guacamole and Pineapple Poblano Guacamole! I love the sweet and spicy combination. Then I sit back, talk some smack, and cheer at the TV for my players! I can’t think of a better way to spend a Sunday!

Gameday Guacamole with Sweet Potato Chips | Plaid and Paleo

Gameday Guacamole with Sweet Potato Chips

Ingredients

  • 2 large sweet potatoes, peeled
  • 1 Tbls coconut oil, melted
  • 1 tsp sea salt

Directions

  1. Heat oven to 375 degrees.
  2. Slice sweet potatoes using a mandolin set to 1/8th inch.
  3. Toss sweet potatoes in a bowl with coconut oil, lime juice and sea salt.
  4. Place on a greased baking sheet and place into the oven.
  5. After 10 minutes, flip the chips then place back in the oven for 10 minutes.
  6. Pull the pan out and place any chips that are starting to brown on a cooling rack.
  7. Place the chips back in for 3-5 minutes. Every oven is different so keep a close eye on the chips so they don’t burn.
  8. Place remaining chips on the cooling rack.
  9. Serve with GoodFoods Guacamole!
