Omg another pumpkin recipe! Well kind of but not really! It does have pumpkin seeds aka pepitas but no pumpkin puree! These double chocolate pumpkin seed power balls are packed with flavor! These no-bake balls combine pumpkin seeds, dates, cacao powder, mini chocolate chips and cinnamon. Simple ingredients, amazing flavor. These double chocolate pumpkin seed power balls might be my new favorite fall treat. I’ve been keeping them in a fridge and sneaking a bite when I need a little pick me up!
Last weekend, I went to another wedding! If you have been keeping track, this is my 4th wedding in 4 months! That is a lot of weddings and zero have been in Arizona, which means I have been doing a decent amount of traveling. I am happy that I don’t have to get on a plane for 2 months! While I enjoy going to weddings, I actually hate flying. (Fun fact: I actually work at a weddings magazine. So I do really love weddings!) I get very conflicted because I love traveling but my dislike of flying is fairly high. It creates quite the conundrum. Most of the time my love of traveling wins out, but I am ready to be a homebody for the next 2 months! I am excited for crockpot meals, cooler weather (well 80s in Arizona), and snuggles on the couch.
I have been living in Arizona for 5 months now. I can’t believe how fast the time has flown by. Despite the heat, I really like the state. It is so diverse and beautiful. Northern Arizona is filled with forests of towering trees, stunning red rocks and even snow-capped mountains in the winter. Southern Arizona is a vast desert spotted with saguaro cactus and large brown mountains sprouting up from the flatlands. I can’t wait for it to cool off and do a little more exploring of my new home state!
Ingredients
- 1 cup peptitas (raw pumpkin seeds)
- 12 medjool dates, pitted
- 2 tbls cacao powder
- 1/4 cup mini chocolate chips
- 1/4 tsp sea salt
- 1/4 tsp cinnamon
- 1 tbls water
- Optional: 2 tbls crushed pepitats
Directions
- Mix all ingredients together in a food processor.
- Scoop mixture with a 1 tablespoon cookie scoop then roll into balls.
- Optional: roll in crushed pepitatas.
- Place in fridge for 1 hour to set. Enjoy!
