Hummingbird Cake Pancakes | Plaid and Paleo

With this reference hopefully it will break down the idea that a home cooked meal has to take 2 hours. The best part… it’s free when you sign up for my newsletter!

My Paleo Pancakes for One is one of my absolute favorite pancake recipes. I used to make them almost every Saturday when I first went paleo. After two year, I thought the pancakes deserved a little bit of a makeover. I love hummingbird cake but only discovered its deliciousness a bit before going paleo. I haven’t had it since going paleo, and thought this pancakes base would be perfect since it uses shredded coconut. These tasty hummingbird cake pancakes are filled with pineapple, banana, coconut and pecans. I like to served them with a drizzle of maple syrup and a sprinkle of shredded coconut and pecans!

Hummingbird Cake Pancakes | Plaid and Paleo

Hummingbird Cake Pancakes

Makes 12 pancakes

Ingredients

  • 5 eggs
  • 2 ripe bananas, mashed
  • 1 cup finely shredded coconut
  • 1/2 cup crushed pineapple, all juice squeezed out
  • 1/4 cup pineapple juice
  • 1/2 tsp cinnamon
  • 1/4 cup pecan pieces
  • coconut oil, for frying

Directions

  1. In a mixing bowl, beat eggs until they are slightly frothy.
  2. Add bananas to eggs and mash the bananas into a paste.
  3. Next add the shredded coconut, crushed pineapple, pineapple juice, cinnamon and pecans.
  4. Stir until smooth.
  5. Heat a large flat skillet on medium heat.
  6. Cover surface with a thin layer of coconut oil.
  7. Use a cookie scoop to add batter to the pan. These do not spread like regular pancakes. Use the back of the cookie scoop to spread the pancakes into 3-4 inch circles.
  8. Let cook until you see small bubbles rise to the surface of the pancake and then flip.
  9. Cook for another minute.

    Congrats on your e-book!! That’s an amazing accomplishment! I have that one on my to do list…in like a year? Haha. I have no idea how to go about doing that! These pancakes look amazing too. When I first looked at the recipe I couldn’t believe they were flourless! These will be on my to-do list TOMORROW. 🙂

    Thanks for sharing and congrats on the book! These sound really yummy to me – except for the pineapple. I realize that this is what makes them ‘hummingbird’ pancakes – but is there an OK way to make them without those 2 ingredients?

      Thank you!! I would suggest this pancake recipe instead–http://www.plaidandpaleo.com/2013/06/paleo-banana-pancakes.html. I based the hummingbird pancakes on that recipes. You can sub in pecan pieces for the blueberries!

    These really sound yummy. I’ve been making pancakes with coconut flour. Do you have any idea about how much coconut flour would equal the 1 cup of shredded coconut?

      It would be very hard to say. I would start with 1/4 cup and add a tablespoon at a time if it looks too runny!
