There is something about Saturdays I just love. I am not rushing out of bed when my alarm goes off. I don’t really sleep in, but I enjoy having the day to myself. One of my favorite things to do on Saturday mornings is make myself a nice breakfast. It starts my day off right, and I feel like I am treating myself to something nice. One of the best parts of Paleo is there are endless options. When I first started, I remember thinking all I could eat was eggs for breakfast. I came across this pancake recipe and immediately knew I needed to try it out. There are only a couple ingredients, which is always a big bonus for me. I cut the recipe down and used less shredded coconut so it is the perfect paleo banana pancakes for one!
Ingredients
- 1 ripe banana, you want one with lots of brown spots
- 2 eggs
- 1/4 cup shredded coconut
- 3 tbls organic blueberries
- 1/4 tsp nutmeg or cinnamon
- coconut oil, for frying
Directions
- Melt a little coconut oil in a large flat skillet over medium heat.
- Use a tablespoon to dish out pancakes onto the skillet. I do two tablespoons of batter per pancake.
- Make sure the blueberries aren't too close to the edge of your pancake or they tend to fall out when you flip the pancake.
- Let cook until you see small bubbles rise to the surface of the pancake and then flip. It only takes a couple minutes on each side to cook.
- Serve with a drizzle of honey and blueberries.

I’m in the process of cooking these. Can’t wait to try these but, if it’s your first time making these I suggest to use one spoonful of batter per pancake until you get the hang of cooking them. My 2 spoonful pancake fell apart when I tried to flip it. I guess this will save me the time of slicing it LoL Next pancake I will try one spoonful. Should be a better pancake hehe

I should note I am a terrible pancake flipper! My first is almost always a flop. I am convinced the second pancake is somehow always better than the first!
