BBQ Chicken Dip

BBQ Chicken Dip | Plaid and PaleoIt is Superbowl time once again. If you couldn’t tell from my previous wings recipe, I love cooking game day appetizers! There is just something about watching a game and digging into wings, dips and more. My buffalo ranch dip is one of my most popular recipes I made for the Superbowl last year. It is so good that I decided to put a new twist on it and make this BBQ chicken dip. I skipped the sugar in by bbq recipes to make this BBQ Chicken Dip Whole30!

Last year I completed my first Whole30, and I am happy to say a year later I still so happy I did it! It was one of the more challenging things I’ve ever done. Not only did I shed those few extra pounds that had been hanging around for a year, but I also discovered how to cut back on cooking with sweeteners even if they are natural. I was worried this BBQ Chicken Dip wouldn’t be right without maple syrup but I am so happy with how it turned out!

BBQ Chicken Dip | Plaid and Paleo

BBQ Chicken Dip

Ingredients

  • 1 lb cooked chicken, shredded
  • 1/2 cup raw cashews
  • 1/2 cup paleo mayo, or Sir Kensington's brand
  • 1/4 red onion, diced, about 1/3 cup
  • 3 tbls cilantro, minced, plus more for garnish
  • BBQ sauce
  • 15 oz tomato sauce
  • 1/4 cup apple cider vinegar
  • 4 tsp dijon mustard
  • 2 tsp chili powder
  • 2 tsp onion power
  • 1/2 tsp pepper
  • 1/2 tsp sea salt

Directions

  1. Heat oven to 350 degrees.
  2. Boil cashews in two cups of water for 30 minutes.
  3. Add all bbq sauce ingredients to small sauce pot.
  4. Bring to a simmer and cook for 20 minutes then let cool.
  5. Once cashews are done, place cashews into your blender and mix until smooth with 1/4 cup cooking liquid.
  6. Fold in cashew cream with bbq sauce, mayo, red onion and cilantro.
  7. Place into small casserole dish or large ramekin.
  8. Cook for 20 minutes until top is a little crusty.
  9. Top with more cilantro and serve with celery sticks or carrots.

Notes

Alternatively you can use 1 1/2 cups of your favorite paleo bbq sauce!

    I tried this last week and it was UH. MAY. ZING. Definitely going to make it again! Thanks for a delicious recipe! My advice to any who haven’t made it yet: go with her bbq sauce–it tastes strange on it’s own (yes, it does), but it pairs amazingly well with the cashew cream. Heaven!

    I think I am missing something.
    On step 5 : Once cashews are done, place cashews into your blender and mix until smooth with 1/4 cup cooking liquid

    what is cooking liquid?

      The cooking liquid is the leftover water that you cooked the cashews in!
