In college, my sorority threw a “Favorite Holiday” party. Since dressing up as a Groundhog might have been weird slash difficult. I settled on my second favorite holiday- Cinco de Mayo. Yes I know Cinco de Mayo isn’t necessarily a real holiday, but that is what I love about it. I think my love of Cinco de Mayo stems from my love of Mexican food and margaritas. From traditional Mexican fare to Tex-Mex to Oxacana, I love all Mexican food. When I lived in Los Angeles, there was a tiny tequila bar that served street tacos and strong margaritas. One of my favorite tacos was the Chorizo con Papas Tacos or Chorizo with Potato Tacos. I did my best to bring those flavors back with these Paleo Chorizo and Potato Tacos, and I am so excited about the results. Smoky chorizo pairs with white sweet potatoes, spicy jalapeno and fresh cilantro for a delicious and easy Chorizo and Potato Tacos!
Funny story about these Paleo Chorizo and Potato Tacos. I had my heart set on creating these tacos. I set off for the grocery store late hoping to pick up the ingredients then cook the tacos in the morning. My local grocery store informed me that they stopped selling chorizo a few months back so it was on to Whole Foods. Since it was late at night, Whole Foods was completely sold out of chorizo! I decided to make my own, but then Whole Foods didn’t have all the spices I needed. So I stopped by my local spice store to pick up the remaining spices for the chorizo. If you are keeping track this is now my third stop for this recipe. In the morning, I set off to make my tacos when I realized I didn’t buy any limes. Now this recipe doesn’t have limes, but I planned to create a margarita to pair with the tacos. It was back to Whole Foods for my fourth grocery stop. A silver-lining to this story is that on my second trip to Whole Foods the chorizo was back in stock and I decided to forgo making my own. Long story short, I was determined to make these Paleo Chorizo and Potato Tacos and I am so, so happy with the results!!
Ingredients
- 1 lb chorizo
- 1 cup sweet onion, diced
- 1 tbls jalapeño, small diced
- 1 lb sweet potato, peeled and small diced
- Jalapeño slices, for serving
- Cilantro, for serving
- Paleo 3-ingredient tortillas, for serving
Directions
- Heat large cast-iron skillet over medium heat, then add in chorizo.
- Brown and break apart chorizo.
- Stir in onion and jalapeño. Cook until onion is translucent, 2-3 minutes.
- Add in sweet potatoes. Coat with chorizo mixture, cover and cook for 10 minutes stirring occasionally.
- Top with jalapeño slices and cilantro and serve in my 3-ingredient tortillas from Paleo for One or as a taco bowl.
