I’m back in Oklahoma but it doesn’t feel real. My last few stops back in my home state could be categorized as temporary layovers to my next destination. This time I will be home for awhile. It is weird but good to be home. Although the travel bug hasn’t completely be quenched, my next adventure will have to wait for a bit, but in the meantime I will be dreaming of far away places.
You know when you really want something to work and it just doesn’t. You ignore all the signs and trudge forward with abandoned. I do this in cooking and sometimes in my life. There was a quote I couldn’t get out of my mind so I did what anyone would do. I googled it. Ah The Holiday. If you haven’t seen this movie, do it. I don’t care it is still summer and the movie is set at Christmas time. So in the movie Kate Winslet says, “very square peg, very round hole.” I don’t know why this quote of all things kept popping up in my mind, but it did and it gave me comfort. Sometimes things just don’t work because they never fit to begin with.
Ok now I’m done with my vague realization, let’s talk about these no-bake german chocolate bites. Despite the name, German chocolate isn’t actually from Germany! Even though this is true, German chocolate cake was always part of my childhood. Even my German relatives thought it was German! When I was little, I would get so excited when I saw chocolate cake only to be disappointed when it was German chocolate. I didn’t like shredded coconut or pecans. Thank goodness for changing taste buds.
Ingredients
- 12 medjool dates, pitted
- 1/2 cup unsweetened shredded coconut
- 1/2 tsp vanilla extract
- 1/4 cup pecan halves
- 1 tsp water
- 1/4 cup enjoy life chocolate chips
- 1 tsp coconut oil
Directions
- Mix dates, coconut and vanilla together in a food processor.
- Once combined, mix in pecans and water.
- Use a tablespoon cookie scoop to make balls with the mixture.
- You will want to make sure you roll them tightly.
- Place on a baking sheet and put into the freezer for 1 hour.
- In a double boiler, melt enjoy life chips and coconut oil.
- Dip frozen balls into the chocolate and coat thoroughly.
- Place onto a lined baking sheet and store in the fridge.
- Once chocolate is set, store in an airtight container and leave in the fridge.

You could substitute raisins! I think a combination of 1/4 cup golden and 1/4 cup regular raisins would give you the right flavor. If the batter isn’t coming together I would add more regular raisins!

I found this recipe in an article titled “25 sugar-free desserts”. Holy Cow! I thought this is fabulous!!! I am so going to make these!!! But alas…. this isn’t really sugar-free but rather a sugar alternative. Dates actually have 16 grams of sugar per date, 18 grams of carbohydrate, 16.4 grams of net carbs, and a whopping 16 grams of sugar. And if you’re interested in calories, each date has 66 calories. By comparison, 1 tbsp of table sugar contains 46 calories, 12 grams of both carbohydrate and net carbs (no fiber), and 12 grams of sugar. Using dates brings this recipe up to 192 grams of (date) sugar, which is equivalent to roughly 16 tablespoons of table sugar or about 1 cup. For us folks who are trying to get as much sugar out of our diets as we can, this is a lot of sugar. If you were to use table sugar in this recipe, you wouldn’t see much difference, as 12 dates contain 792 calories and 192 grams of sugar; whereas, 1 cup of table sugar contains 773 calories and 199.8 grams of sugar. So how the heck do we make delicious AND low sugar/no sugar treats like this, without using dried fruits that have high concentrations of sugar??? I’m totally stumped. So I’m wondering if you have any thoughts on what could be substituted for the dates (or any other dried fruit) in this recipe? These just look amazing, and I would love to make them for the holidays…. just in a lower sugar form.

Thanks for your comment. I don’t control who puts my recipes in roundups, so I am not 100% sure which one you are referring to. In the paleo community, there is a big difference between natural sugar sources (such as dates) versus commercial white sugar. White sugar has many negative effects on the body that natural sugars do not. Dates are a main component of this recipe and really can’t be replaced. Sorry I can’t be more help. -Vanessa
