Confession time. My sister made this Chocolate Chip Cookie Pie. She has the patience to remake recipes multiple times if it doesn’t work the first time. I accredit this to the fact she has three children and also an extreme sweet tooth. I on the other hand am not blessed with said patience. Give me a savory recipe and I will tinker away until it is perfect. Baking I tend to give up if it doesn’t work the first time, which is why you don’t see too many baked goods on my blog. If there is one, it turned out great the first time or almost perfect so I easily recreated it a second time.
Ok back to the chocolate chip cookie pie. This is one of my sister’s favorite desserts. About 10 years ago, a family member brought it to Thanksgiving and my sister was instantly hooked. The pie was originally called Tollhouse pie. For the longest time, I thought the recipe came off a bag of chocolate chips, but I recently discovered it is actually a of family recipe from another branch of my family! I did a little rebranding of the pie since I didn’t use Tollhouse chocolate chips, I figured I could change the name. This chocolate chip cookie pie is super easy to make. I like that it only has 5 ingredients! The pie is a combination of a cookie, brownie and a cake hence the name: chocolate chip cookie pie. It is really good!
Ingredients
- 3 eggs
- 1/4 cup coconut flour
- 1 cup coconut sugar
- 1 cup grass-fed butter, melted
- 10 ounces Enjoy Life Chocolate Chips
Directions
- Heat oven to 325 degrees.
- Heavily grease 9” pie pan with butter or coconut oil.
- In a mixing bowl, beat eggs until foamy.
- Mix in coconut flour and coconut sugar until well combined.
- Add in melted butter and mix well.
- Stir in chocolate chips.
- Pour batter into greased pie pan. Cook for 40 minutes then tent with foil and cook for another 30 minutes.
- Serve warm.
