I love this gluten-free grilled vegetable medley because it is so easy to make, and it is packed with fresh flavor. Grilled zucchini, yellow squash and red onions make the perfect summer veggie combo! My mom made a version of this grown up, and I was always in charge of manning the grill basket to make sure the vegetables didn’t burn, which was a big task for me given that I wasn’t much of a cook. Thankfully times have changed, and my cooking skills have improved immensely! For this recipe, I ditched the grill basket in favor of getting deep grill marks on the vegetables for an added boost of flavor. To finish the dish, a splash of balsamic vinegar adds a brightness to the dish. I love pairing this gluten-free grilled vegetable medley with some kind of protein like steak or pork chops.
You might have noticed that I have been switching things up around here lately. I started my blog six years ago with the sole purpose of keeping myself accountable to eat paleo. It quickly turned into so much more, and I loved creating weekly recipes and sharing them on my blog. Over the years though, my life has become pretty hectic. Since I started my blog, I have moved 5 times with 3 of those moves being to different states. In this time, I met my husband, bought a house, got engaged then married. It has been a whirlwind few years, and I put Plaid & Paleo on the back burner simply because I was enjoying just living my life. I am still passionate about healthy food, but my focus has changed from strict paleo to more of a naturally gluten-free approach. So what does that mean for you? Gluten-free Grilled Vegetable Medley

Ingredients
- 2 zucchini, cut into 1/2 inch slices lengthwise slices
- 2 yellow squash, cut into 1/2 inch slices lengthwise slices
- 1 red onion, cut into 1/2 inch rounds starting with the roots to your left
- 1/2 cup oil or avocado oil
- 1 tbls Italian seasoning
- 1 tsp sea salt, divided
- 1/2 tsp black pepper
- 2 tsp balsamic vinegar
Directions
- Turn grill onto medium-high heat.
- Mix together avocado or olive oil with Italian seasoning, 1/2 tsp sea salt and 1/2 tsp black pepper.
- Brush seasoned oil over one side of the vegetables.
- Place vegetables seasoned side down on the grill and coat other side with seasoned oil.
- Close grill lid and cook for 3 minutes. Flip vegetables and cook for 3 minutes.
- Remove from grill and cut into 1/2” pieces. Toss vegetables with 1/2 teaspoon sea salt and balsamic vinegar.
