Okay so I have been sitting on this Buffalo Chicken Totchos recipe for a while. I made these totchos in fall, and I was so obsessed. Then I realized, I didn’t write down the recipe. UGH! This is the first time I have ever completely not written down a recipe. I have three places where I tend to write down a recipe, and somehow I didn’t write it down anywhere. Oh well. I finally decided to remake the recipe because it is fun and tasty. You might be wondering what is totchos? Tater tots plus nachos creates the glorious combination of totchos! I had Buffalo Chicken Totchos at a local restaurant this fall, and I immediately knew I needed to remake it for the blog. With basketball season about to hit its highlight with March Madness, these Buffalo Chicken Totchos would be an amazing appetizer to serve at a watch party to cheer on your team.
I have lived in Arizona for almost 9 months now, and I am finally making a real effort to step out of my comfort zone and try new restaurants. This weekend I stumbled upon an amazing gem called Hand Cut in Old Town Scottsdale. The restaurant I planned to eat at was booked until 10pm, so my friend and I went on a walk to see what else was close by. Boy did we find the perfect restaurant! Hand Cut specializes in burgers and steaks that are grass-fed, antibiotic free and locally raised! All are HUGE wins in my book. I ordered the filet and my friend ordered the butcher steak. Both were cooked to absolute perfection. We paired our steaks with roasted brussels sprouts and sweet potatoes which made the perfect side to our savory steaks. I loved finding this new restaurant, and I can’t wait to explore more of Phoenix!

- 1 Recipe Sweet Potato Tots
- 1 cup shredded chicken
- 3 tbls Frank’s Hot Sauce
- 2 tbls green onions, diced
- 2 tbls coconut milk
- 2 tbls paleo mayo
- 1 tbls easy ranch seasoning
Directions
- Prepare sweet potato tots according to the recipe.
- In a bowl, combine shredded chicken and hot sauce.
- In another small bowl, mix together coconut milk, mayo and ranch seasoning.
- To serve, place sweet potato tots on a large plate, top with buffalo chicken and a drizzle of ranch seasoning.
