I think I have a new favorite work lunch with this Paleo Asian Chicken Salad! Two years ago, I made this Pomegranate Chicken Salad, and I have eaten it over and over again. I decided to use similar proportions from that recipe but swap in completely different flavors. This Asian Chicken Salad turned out better than the idea in my head! It is packed with flavor and just the right amount of crunch! The best part it is super customizable. I love adding in chopped bell peppers, sugar snap peas, bean sprouts and even cucumber. The more veggies the better in my opinion.
This past week my sister and niece were in town for Spring Break. Wouldn’t it be amazing if we had spring break as adults?? I think we should implement this asap. Seriously though. I need a vacation. I realize I just went to Las Vegas, but that was jammed packed with activities, eating and going out. I just want to lay on a beach, drink margaritas and nap. I have been looking at vacations to Cabo, but I have been there before and really want to try somewhere new! Has anyone been to Tulum? I feel like it has been all the rage the last few years. I like that it is more off the beaten path than Cancun, but it is also a two-hour bus ride from the airport, which sounds like torture. I don’t know. I am still very intrigued by Tulum. I am aiming for late summer to early fall. If you have any suggestions for beach vacations, I would love to hear them!!

Ingredients
- 1 lb cooked chicken, shredded
- 2 cups coleslaw mix
- 2 cups broccoli slaw
- 1/4 cup sunflower seeds
- 1/4 cup green onions, sliced
- 1/4 cup sunflower butter
- 1/4 cup coconut milk
- 2 tbls lime juice
- 1 tbls coconut aminos
- 2 tsp rice vinegar
- 1 tsp sriracha
Directions
- In a large bowl, combine shredded chicken. coleslaw mix, broccoli slaw, sunflower seeds and green onions.
- In a small bowl, combine all “peanut” sauce ingredients until completely incorporated and smooth.
- Pour “peanut” sauce into large bowl and toss all ingredients together.
- Serve!
