Who here is a Harry Potter fan?? I jumped on the bandwagon way late, but I am obsessed!! With Halloween quick approaching, I’m preparing for a binge Harry Potter marathon. There are two main drinks in the books, pumpkin juice and butter beer. I still don’t know if butter beer has alcohol in it?? Seriously someone tell me! Since I wanted to make a kid-friendly drink, I knew I had to make Paleo Pumpkin Juice! If you go to one of the Harry Potter theme parks, you can buy pumpkin juice. Unfortunately it is stuffed full of sugar. So if you can’t make it to Harry Potter world, why not make this simple 3-ingredient Paleo Pumpkin Juice at home! Even if you aren’t a fan of the books or movies, everyone can enjoy this tasty fall beverage into the winter months.I jetted off to Denver this weekend for a quick vacation, and my first concert at Red Rocks Amphitheater! I love Denver this time of year. The crisp air with the Rockies as the perfect, stunning backdrop is the best combination. I barely missed the changing of the leaves, which would have been the cherry on top to an amazing weekend! I really like living somewhere warm, but I miss fall. Fall nudges out summer as my favorite season because of the beautiful fall colors and all the tasty fall foods! From pumpkin to apple to stews and so many crockpot meals, I can’t wait to whip up some new tasty recipes for you guys. I have like a million ideas that it is sometimes hard to pick what I am going to make. Since there is only me, I can’t make all a million recipes or I would be eating leftovers for the rest of my life!

- 8 oz (1 cup) organic apple cider
- 3 oz (6 tbls) apricot nectar
- 3 tbls pumpkin puree
