January always brings on a slew of New Years Resolutions to eat healthier, and I love it! I don’t care if you stumbled across my blog because it is just that time of year. I am happy you are here and found your way to my little paleo patch of the internet.
A huge trend in January is to complete a Whole30. Whole30 is a stricter form of paleo in many ways but it is also a chance to find out what foods work or do not work for your body. You can find out more about Whole30 here, and I definitely recommend checking out the book “It Starts with Food.” I completed my first Whole30 two years ago in January. January is a great time for Whole30 because there are so many people also following along.
The hardest thing for me on Whole30 was all the cooking! I cook a lot but on Whole30 you are cooking almost every meal. I relied on Whole30 Breakfast Casseroles to cut down on my cooking. I would make one breakfast casserole on Sunday and then eat it throughout the week. Not having to worry about breakfast makes Whole30 so much easier! For Whole30 approved bacon, I recommend Pederson’s Natural Farm No Sugar Added bacon. These are some of my favorite Whole30 breakfast casseroles from some of my favorite health food bloggers!
