It’s Halloween time! When I was younger Halloween wasn’t such a big deal, which I probably why I love it now. I love coming up with creative or funny costumes. I also love making fun, festive food. Last year I made these Spooky Banana Pops, which were a hit with my nieces. Two years ago, I made these Almond Joy Bites, which are still my mom’s favorite! This year I decided to make a treat that is more for adults. These Candy Corn Gummies are a far cry from their refined-sugar inspiration. Each layer is packed with gut healing gelatin! They can be made Whole30 by omitting the honey. Honestly I don’t think they need the honey, but I have a weird non-sweet tooth sometimes. I just love how festive these candy corn gummies look! Note: these do not taste like classic candy corn. They are just made to look cute and festive with lots of healthy add ins!
Sometimes I go back through my old recipes and give them a little makeover. Mainly I retake the photos from the scary pictures of years past. This last weekend I decided my Spicy Pumpkin Pasta needed a little refresh. I love this recipe so much, and the pictures didn’t do it justice. Spicy Italian sausage combines with sweet pumpkin, garlic and carrots served over spaghetti squash for a delicious fall dinner!
*Make sure you use a more yellow turmeric. You don't want to use the orange kind or the color will not be right.
**If you are having issues with the gelatin clumping, you can transfer the mixture to a blender and mix until smooth.
Ingredients
- 15 oz can coconut milk, divided
- 3/4 tsp turmeric*
- 1 tbls honey, optional
- 1 tbls grass-fed gelatin
- 1 cup orange juice
- 1/4 cup carrot juice
- 2 tbls grass-fed gelatin
- Remaining coconut milk, about 3/4 cup
- 1 tbls grass-fed gelatin
- 1 tbls honey, optional
Directions
- Line a 9x5 inch loaf pan with plastic wrap. Then cut a piece of parchment paper to fit along the bottom of the pan.
- Pour 1 cup coconut milk, turmeric and honey into a small sauce pot. Bring to a slight simmer and add in gelatin.
- Whisk until all the gelatin is dissolved.**
- Pour into prepared loaf pan and let setup for at least 4 hours.
- Combine the orange and carrot juice in a small sauce pot. Bring to a slight simmer and add in 2 tablespoons of gelatin.
- Whisk until all the gelatin is dissolved.**
- Pour into prepared loaf pan and let setup for at least 4 hours.
- Pour remaining coconut milk into a small sauce pot. Bring to a slight simmer and add in 2 tablespoons of gelatin.
- Whisk until all the gelatin is dissolved.**
- Pour into prepared loaf pan and let setup for at least 4 hours.
- Once all layers are set, carefully remove the layered gelatin from the pan by pulling up the plastic wrap.
- Cut the layered gelatin into 1/2 inch strips widthwise. Then cut these stripes into triangles. Store in an airtight container in the fridge for 2 weeks.

These are awesome! I am a huge Halloween fan and the candy gets me in trouble. Having healthier alternatives helps me to remember I can still enjoy the season and forget the conventional junk I used crave.

I do not understand how to set them in layers and then cut them. Can you please help me?

Hi Crystal! The layers are created by pouring each layer in individually and letting it set up for a few hours before pouring in the next layer. Once all your layers are set, you remove the loaf from the pan. Use a knife to cut the loaf width wise in about 1-inch strips. You will then have 5-inch strips that you cut into triangles. Does that help?

These were easy to make and looked very nice when complete. However, the turmeric was without a doubt the primary flavor. The coconut milk has such a light, delicate flavor, but it was overpowered by the turmeric. The orange/carrot was nice, Other than that, this was a clever and fun snack.

Would just plain orange or pineapple juice work for the yellow part?

Pineapple might work but it doesn’t always react well with gelatin. You won’t get the bright yellow color though without the turmeric though.
