A couple weeks ago I went to one of my favorite restaurants and finally decided to branch out from my go-to entree. I am so happy I did. I have been trying to eat more seafood and went for the salmon. I’ve never ate salmon where the skin was featured. Let me tell you. I will not be wasting salmon skin ever again! This crispy salmon skin with curry sauce is my take on the restaurant’s dish. The crispy skin adds an extra crunch and salty flavor which pairs perfectly with the spicy curry sauce.
Has anyone else become a complete waste of space since Friends was added to Netflix? I am hoping it is not just me. I love actually watching the show in order. It is so weird to see scenes you’ve missed even though you feel you have seen the whole series multiple times! Netflix has been playing a sick joke. After just 2 episodes, Netflix asked “are you still watching?” Of course I am still watching. Ok I swear I did a ton of productive things this weekend, including making this crispy salmon skin with curry sauce that you should go make!
Ingredients
- 2 6oz wild caught salmon filets
- 1 1/2 tbls grassfed butter or ghee*, softened
- pinch of salt and pepper
- 1 cup full fat coconut milk
- 1 tbls grassfed butter or ghee*
- 1 tbls curry powder
- 1 tbls red curry paste
- 1/2 tbls chili flakes, 1/2 tsp for less heat
- 1/4 tsp salt
- zest of one lemon
Directions
- Turn oven broiler to high.
- Rub butter or ghee on salmon skin and sprinkle with salt and pepper.
- Place salmon skin side up on a non-stick baking sheet or one lined with foil.
- Put in the refrigerator for 20 minutes.
- Cook for 8 minutes on the top rack of the oven. You want your pan to be about 5 inches from the broiler.
- While the salmon cooks combine all sauce ingredients in a sauce pan oven medium-high heat.
- Boil for 5-8 minues to let the sauce reduce.
- Serve salmon on top of curry sauce.

Yum, I’m excited about this recipe since I have heard for years about how good salmon skin is for you but I could never bring myself to enjoy it. I eat it begrudgingly sometimes because I want my kids to eat theirs but if I could LIKE it? Well, that would be a game changer. So I will be trying this out for sure!
