Happy Monday! Just kidding it’s already Tuesday. Which is pretty exciting because it means the weekend is only a couple days away. Yes I understand the weekend just ended but I do love the weekend, and there are only a few left before summer melts into fall. Summer is my favorite season but this one has been hot! I’ve spent my last four summers in Los Angeles where the weather rarely peaks above the high 80s. It is not that way in Oklahoma. High 90s to 100s have plagued the entire summer making it less than desirable to be outside.
This dessert screams summer but you can make it anytime you want. This is a no bake, cheeseless cheesecake! One of my favorite local restaurants served an avocado cheesecake that was so good but it made me so sick. I really shouldn’t eat dairy but I indulge sometimes. I wanted to recreated the avocado cheesecake sans cream cheese. I am so excited how this dessert turned out. It is not overly sweet and the fruit topping really brings it all together.
Ingredients
- 1/2 cup macadamia nuts
- 1/2 cup almonds
- 1 tbls honey
- 1 tbls coconut oil
- 1/2 tsp vanilla extract
- pinch of sea salt
- 2 small avocados
- 1/2 cup apple juice
- 1/4 cup coconut butter, melted
- 3 tbls honey
- 1 tbls coconut flour
- 2 tsp vanilla extract
- 1 kiwi, diced
- 1/2 cup strawberries, diced
Directions
- Pulse macadamia nuts and almonds in a blender or food processor until almost flour consistency. Be careful to not blend too much or you will have nut butter.
- Add in honey, coconut oil, vanilla extra and salt. Pulse until well combined.
- Line cupcake pan with foil liners or double regular ones.
- Scoop even portions, approximately one tablespoon, of the crust into the liners.
- Gently press dough down until it cover the entire bottom of each liner.
- Blend all ingredients together in a blender or food processor until smooth. Pour into crust molds and place in the refrigerator for 6-8 hours.
- Mix strawberries and kiwi together.
- Serve cheesecakes topped with fruit.
Notes
*These are best eaten the same day because the avocado will turn slightly brown. *Keep refrigerated until ready to serve.

Can I sub pineapple juice for the apple juice? I’m allergic to apples.
