Fire Roasted Pepper Burgers

Fire Roasted Pepper Burgers | Plaid and PaleoI hope everyone had an amazing 4th of July! I’m sad to leave Florida today. I’ve been enjoying the ocean breeze, salt water and sand. I truly miss living by the beach. When I was little I dreamed about living near the beach, but never actually thought it would happen. Now that I’m back in the Midwest, I still can’t believe I lived by the beach in Los Angeles. I lived my dream. 

So this recipe should really be called “using up all my ingredients in my fridge.” I went to the grocery store with a recipe in mind and left empty handed. When I got back home, I examined the contents of my fridge again and realized I could make a pretty tasty burger. I always keep a couple pounds of grass-fed beef in my freezer for emergencies. It is so handy. Ground beef is very versatile and a less expensive cut to buy grass-fed! These fire roasted pepper burgers combine the flavors of three peppers to give a spicy kick complimented with a fire roasted pepper sauce made milder with a few fresh tomatillos.

Fire Roasted Pepper Burgers

Ingredients

    Pepper onion mixture
  • 1 poblano pepper
  • 1 anaheim pepper
  • 1 serrano chili
  • 1/2 cup red onion, minced
  • Fire Roasted Pepper Sauce
  • 3 tomatillos
  • 1/2 cup crushed pineapple
  • 1 tsp lime juice
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 pepper onion mixture
  • Burgers
  • 2 lbs grass-fed ground beef
  • 1 egg, whisked
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 pepper onion mixture

Directions

  1. Place poblano, anaheim, serrano and tomatillos on the grill. Cook until all sides are charred then place in a paper bag for 5 minutes. Remove the skins and seeds of the peppers then mince and mix with minced red onion. Put tomatillos and half the pepper onion mixture into a blender with pineapple, lime juice, salt and pepper. Mix until smooth.
  2. With your hands combine ground beef, egg, spices and the remaining half of the pepper onion mixture. Form into sliders. Makes about 8. Turn grill to medium-high heat and grease with fat of choice. Cook sliders for 3-4 minutes on each side. Serve with fire-roasted pepper sauce.

    These look incredible! I love the “cleaning up my fridge” recipes… for some reason, they often seem to come out better than my planned recipes.
