Today I am sharing a super easy and delicious recipe for Cauliflower Pork Fried Rice from my friend Jenny of Paleo Foodie Kitchen’s new cookbook One-Pot Paleo! I had the pleasure of meeting Jenny this year at Paleo f(x). We stayed together in a house with a bunch of paleo bloggers, which was an amazing experience!
On the last day, Jenny shared a recipe from One-Pot Paleo at the Cooking Demo stage. I am pretty sure the smell of bacon frying had everyone’s stomachs growling. I was so excited to receive her book because I loved the concept. When you are cooking for one, the last thing you want to do in a ton of dishes! Jenny’s cookbook is filled with beautiful photographed recipes from Hawaiian Meatballs to Plantain Chilaquiles to Cashew Beef to Irish Stew and more. I like the way the book is broken into sections by the type of pot, such as: cast iron, casserole and stir-fries. If you haven’t already be sure to check out One Pot Paleo!
Ingredients
- 1 tbls ghee or bacon fat
- 2 cloves garlic, minced
- 1 cup sweet onion, chopped
- 1 lb ground pork
- 1 cup carrots, chopped
- 3 tbls coconut aminos
- 1 tsp fish sauce
- 1/4 tsp coarse ground black pepper
- 2 large eggs
- 4 cups cauliflower rice*
- 1/2 cup green onions, chopped
Directions
- Add ghee to a wok over medium-high heat. Add the garlic and onions. Sauté for 2 minutes. Add the ground pork and cook for 7 to 8 minutes while breaking apart big pieces with the back of a wooden spoon.
- Stir in the carrots and season with the coconut aminos, fish sauce and black pepper. Remove from the wok and set aside in a bowl. Crack the eggs into the wok and scramble for 1 minutes. Return the pork mixture to the pan and stir together with the eggs. Add the cauliflower rice and green onions. Mix until everything is thoroughly combined. Cook for 5 minutes until cauliflower is soft but not mushy.
- Top with more green onions before serving.
Notes
*For easy cauliflower rice, simply place chopped cauliflower florets into your blender or food processor and pulse for 25-30 seconds until a rice-like consistency.
