This weekend flew by! I’m suffering from a Game of Thrones hangover. I mentioned last week I just started watching. Well I am now ready for the fourth season. Oops! I don’t normally binge watch TV but I got sucked in. All of this meant I put off cooking until yesterday and then spent the whole day in the kitchen. Followed by attempting to read my entire book club selection for the month. I am not normally a procrastinator but I blame GOT!
Have any of you heard of the app Timehop?! At first I didn’t really like it, but now I think it is hilarious to read all the embarrassing things I used to tweet about. The best is the old photos it pulls from Facebook. It is also crazy to see how much can change in not that long.
Yes it is another sweet and sour meatball recipe, but hear me out. I wanted to make a simple and quick meatball recipe. I’m trying to create recipes with less ingredients, and this one only has 8! I don’t count salt and pepper. This is a great week night dinner that comes together quickly and cooks fast.
Ingredients
- 1 lb ground pork
- 1 egg
- 1 tbls coconut flour
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 20 oz can diced pineapple
- 1/4 cup tomato paste
- 2 tbls worcestershire sauce
- 1 green bell pepper, chopped
- 1 small sweet onion, chopped
- 1/2 tsp sea salt
- 1/2 tsp pepper
- *If you can't find a clean worcestershire sauce, sub 1 tbls coconut aminos and 1 tbls apple cider vinegar.
Directions
- Heat oven to 350 degrees.
- Lightly grease a 8x8 baking dish.
- In a bowl, combine all meatball ingredients. Let sit.
- In another bowl, combine all sauce ingredients.
- Roll meatballs into small balls, makes about 12, and place into dish.
- Pour sauce mixture over meatballs.
- Cook for 25 minutes.
- Serve meatballs with the sauce poured over top.

Do you think I could make the meatballs and sauce in advanced, store them in the fridge and then bake them when I get home from work?

Absolutely! I would just make sure they are in a seal container.
